Sourdough from Scandinavia... in Málaga 🤯 And it's amazing! OK so I may have taken a slight detour from my holiday to meet Thomas and the team behind this bakery at the start of their 4am shift whilst on a holiday to Málaga recently... and I don't regret the early start one bit!
Lovely origin story, excellent bread... and now we find out that there's a really strong starter powering it all...
"Miss Andalusia" nailed a steady rise to reach 260% at 4.8 hours... so she was a speedy one as well!
