    Vita, you taught me about the wonders of homemade sourdough bread. I had been gluten free for years after being diagnosed as allergic to it. But I read in the comments on one of your videos that Einkorn flour is safe. Now I make an Einkorn/Sprouted Spelt sourdough using your instructions and recipe. I swear my bloating goes away and I feel satiated and have less pain after I eat this bread - and I have a gluten allergic friend who has the same experience with this bread! 🥖

      So glad my sourdough recipes helped! I wish I could continue eating it as well, but if I really have Celiac Disease, it would be much too risky. After giving birth, even my sourdough bread was causing issues, so it seems that I really became much more sensitive than before.

      She uses a total of 1030 grams of flour - here's my version: -- 300 g sprouted spelt by "One Degree" -- 330 g Whole wheat Einkorn -- 400 g White Einkorn (by "Jovial")
      You can certainly mess with the portions, but i tried this recently and my friends said it was the best they've ever had...

    This sounds so familiar, I was thinking why have I been so ridiculous. The last few months I have been cheating on food and eating the odd bit of bread, a wrap here and there and so on. This last month I have been ill every week, my migraines are worse, low energy and this week rash all over chest, mouth ulcers and sore throat. Didn' t connect the dots as in the past it seemed to just affect my gut. After reading more I realise what is going on, back to being strict with it and I am going to record my health in a notebook . I hope you stay well, have a great week.

    I think you made the right decision by not consuming any more gluten. I had lots of health problems and I also had to forget about gluten. I only consume organic meats and fish also vegetables that does not make me bloated. I also like fasting and I'm a new person.

    You are right about gluten. Every time I eat a little, the next few days I get itchy scalp and hair fall, and I get a little down with my mood. If I stay with tubers and fruits and milk as carbohydrate sources, I have no problems. I've seen that gluten also increases prolactin secretion, which is not good at all.

      Glyphosate is bad, but even organic wheat is bad for some people like me. For most, organic wheat is a wholesome food.

    thanks for sharing! After your videos about sourdough I started making it myself. your arguments seemed so reasonable that I started feeling safe about eating gluten) and overall being more relaxed about food and more respectful to all kinds of food - both I am especially thankful for. now I have to rethink it again( a little bit upset.. but glad you stay honest and share your journey, you're making huge job. thank you❤️

      I'm sorry to have disappointed you. :-( You can't imagine how disappointed I am myself. But if my body is clearly unhappy, I must listen and make a change. This is just my experience though. It doesn't mean that sourdough is bad for you.

    So glad you opened up about this! I too have struggled with gluten intolerance for years and have constantly "cheated." I'm thinking after watching this video I should give gf a try for real. I have attempted sourdough to replace other breads but I still get bloated and tired when I eat it. Will you still keep doing sourdough? Would love to see what you're eating in a day gluten free 😁

      Cheating was such a mistake. I regret it so much. I could have been sooooo strong and healthy by now if I had stuck to the diet properly 3 years ago. So I would say if you haven't done it strictly yet, do it for at least a month or two. You might get completely different results. Unfortunately, making sourdough is too risky for me. Even if the sourdough fermentation gets rid of most gluten, it's not 100% sure that it's all broken down everywhere evenly. And then working with the flour is a big gluten exposure as well. I've become very sensitive even to the tiniest particles or traces of gluten since going off it, so I'm really not willing to risk it and I've made my home a completely gluten free space (my poor hubby!). I'll make a What I Eat in a Day video soon.

Recently i started having itching on my arms and legs but no stomach pain but do have mood swings and after seeing your video I am going to visit my doctor.       Hi Anita! Thank you so much for all your sweet messages and comments on Instagram and here. Here's a website about all of the tests for Celiac Disease. Anti-Gliadin IgG is the test often used for diagnosing gluten intolerance. It can either mean gluten intolerance or Celiac Disease, and needs to be followed up with other more accurate tests or intestinal biopsy if you want to know for sure.

    I had similar symptoms after the birth of my boy. Excessive hair loss, fatigue, sleeping disorders, moody, itchy body and my skin was dehydrated. I only breastfed my boy for 2 months. Eventually i had thyroid cancer, i have removed it and i am ok now trying to conceive my second baby. So At first i thought it was because of the baby and the birth and then because of the thyroid but my thyroid hormones were totally normal, i just i had a very tiny tumor. Do you believe that it could be due to gluten cause i still have the same symptoms

      Look at dr. Eric Berg videos. Remember cancer love sugar and gluten turns into sugar through your liver and it also causes inflammation which increases cancer.

      @@dj-fe4ck I had really bad insulin resistance pre-diabetic so I have to stay away from fruits and sugar and I had Candida from all the sugar I was consuming I will not go back to my old ways I was very sick. Remember the fruits that we have today are not the same that we had 200 years ago they're sweeter now and barely have seeds.

There are wild unhybridized fruits from the tropics that have always been just as sweet and have just as much sugar as modern hybridized fruits. Sugar is not the problem. Sugar with too much fat in the diet is the problem

    I had to go gluten free too. Most of the same symptoms. Even one cheat makes me feel sick for days now, and my skin gets sores that last for weeks. No gluten, no sores.
    I have found the Barilla brand gluten free pasta to be amazing. I get it via amazon here in the States.
    I developed a gluten free bread recipe that makes a very whole wheat style bread. I took bits and pieces of ideas from multiple recipes and tinkered with various flour substitutes and amounts.
    GF Bread
    Whisk dry ingredients together and set aside.
    1 1/2 cups sorghum flour
    1 cup tapioca starch OR potato starch
    1/2 cup GF millet flour
    2 teaspoons xanthan gum
    1 Tablespoon psyllium powder
    1 teaspoon baking powder
    1 1/4 teaspoons salt
    1 packet dry yeast (2 1/4 teaspoons)
    1 ¼ cup warm water (110 to 115ºF )
    3 tablespoons olive oil
    1 tablespoon honey or sugar
    In a separate bowl from dry ingredients, proof the yeast in the warm water (110 to 115ºF) with the honey or sugar, till foamy, about 10 minutes.
    Add the proofed yeast mixture to the dry ingredients. Add the oil. Beat by hand until a smooth dough forms.
    Scrape the dough into pan sprayed or greased loaf pan and smooth evenly (I use wet fingers).
    Allow the dough to rise in warm spot until it almost doubles, about 45 minutes. Don't let rise too long or it will collapse. If it collapses, stir to remix, reshape, let rise again, then bake.
    Oven 350ºF.
    Bake until it sounds hollow when tapped, about 55 minutes.
    Cool before slicing for best results.

      We have plenty of great gluten free pasta brands as well, but to be honest, I'm not very much into the idea of eating replacement foods. I find that it keeps me in the mindset of lack. In other words, it keeps reminding me of what I can't eat. If I eat unprocessed whole foods that naturally don't contain gluten, I tend to forget about my limitations and feel much more relaxed. Thank you so much for the bread recipe! Again, it's not for me because I don't want to eat replacements, but perhaps someone else will benefit. It sounds delicious!

      @@Vitalivesfree I totally understand. :) I have avoided a lot of replacement foods, and widened my diet of other foods, but sometimes I just need bread or pasta. :)
      We actually dont eat the replacements much. My kids though, really missed pasta and bread after they became gluten sensitive too. So the occasional replacement has been really nice. They have so many food allergies our diet got very limited.
      I am so glad you found what was causing you issues, and are feeling better. That is so important for you and for your family.
      I love that you share your journey. It helps so many of us dealing with the same or similar issues.

    I am in the same boat but for some reasons I feel stubborn and can't accept the fact that I have to stop eating gluten as well. Since given birth my thyroid has been way off. The hair loss has been ridiculous. But because I'm still breastfeeding and baby not sleeping through the night yet I just cant seem to be able to NOT cheat. I'm tired and hungry lol. Thanks for the inspiration!

      I used to think that sugar, even more natural sugar like that from coconut, was causing skin issues. Turns out it was gluten all along. It's just all the desserts I had were always containing gluten + sugar.

    Tbh, I was wondering if this would happen😁, you stepping away from gluten eventually.
    I cannot remember the details, but there was a study done not too long ago (by Harvard possibly?) about gluten and gut permeability. In it, absolutely all, 100%, healthy, non-celiac participants experienced permeable gut after gluten ingestion. Also, gluten activates microglia in the brain which in turn activates an inflammatory response. From what I understand, once activated, they stay that way for several months.

      I think deep down I always knew my gluten days were temporary, that's why I ate so much of it, hahaha. It's incredible how good we are at lying to ourselves just to have another fix of something we're addicted to. Well, better later than never! :-)

      @ Veronique Plain organic wheat with nothing bad added to it is 100% healthy for people who do not have celiac disease or a severe sensitivity to it, which is at least 90-95% of the population

      @@dj-fe4ck I agree with you. Wheat is something our ancestors thrived on for thousands of years with zero problems. If a few unlucky people are sensitive, it doesn't make it bad for everyone else. ❤️

      That's simply no longer true (as illustrated by that study for example). Modern wheat has been so hybridized that it a very different product from what our ancestors ate. The plant itself has been made much shorter and higher in gluten. And I personally know people who were seemingly perfectly healthy go gluten-free for several months and realize that they feel significantly more clear-headed and even healthier.

      @@TheRubyFeline everything is different from what our ancestors ate. The cows and chickens aren't even the same. Almost all fruits and vegetables are different. If they felt better, it's bacause they either have celiac disease or more likely because they were eliminating junk food that has gluten. Almost everyone without celiac disease can eat plain organic whole wheat berries or whole wheat pasta, just one ingredient and no junk added, and feel fine. Plus you can just eat kamut, spelt, or einkorn if you're still convinced that today's wheat is bad. It's not genetically modified either. Hybridization or selective breeding is not genetic modification.

    I just wonder. I follow you over multiple years. Not consistently. But sporadically.
    You always come with some realization, make changes and talk about your state as if I'd be almost perfect.
    Yet couple of months after, you do the same video. Meaning that your previous state couldn't have been so great.
    So you either go to new highs of health as you decode your problems over time (which I would sincerely wish you and hope that's the case) or those changes really don't have such an impact after all..
    What would you say?

      Well, first of all, healing is never linear. It's more like two steps forward, one step back. Often, I start feeling really good and then start getting relaxed, start eating and doing too many things that are known to upset my balance, and then sooner or later I start paying for it. Or it's simply because healing is like peeling an onion layer by layer. You uncover one layer and you feel really great, until the next layer comes off, and then you're back to the drawing board to figure it out. It's a continuous journey of self discovery. But each step takes me closer and closer to great health. If I look back, I've been getting steadily better. There's still a lot of progress to be made, but I'm definitely on the right track. Hope this clarifies things a little bit.

      @@Vitalivesfree thank you for the answer. So when you look back, with all the up and downs. Are you at higher level of wellbeing than say 3 years ago? 5 years ago? And if yes, by how much? I know it's very subjective, you also had a child which obviously changed things. But I believe you can estimate a bit :)

      @@djVania08 Yes, I'd say I'm 70% better than at my lowest point a few years ago when I started my healing journey. So let's say 30% left to go. Does that make sense? ;-)

    Thanks for sharing your experience Vita. Do you still consume Oats (gluten free)? What do you think of about oats if you are gluten free? Some say oats have gluten some say they don’t. I am a bit confused...

      Yes, I do still consume oats. They are and have always been my staple and luckily they don't seem to cause any issues, as long as they are gluten free. Some people with Celiac Disease (I read it's something like 10-15%) react even to gluten free oats, but I don't seem to be one of them.

      @@mrsy9928 Only the gluten free ones. Oats are naturally gluten free but are usually grown and harvested together with wheat, so cross contamination is an issue. That's why gluten free ones are important. 💖

      I've never heard of it, but if it's something you read, you'll have to considered all sources carefully and make up your mind. I can't tell you how much zinc is safe. No one really knows!

    How long off gluten before you noticed improvement? N how long does it take to get gluten out of tge body typically? (I know everyone is different)

      I felt better within a few days, but didn't start feeling fantastic until I got rid of dairy as well. Casein in dairy is very similar to gluten, and those gluten sensitivities often react to dairy as well. If someone has Celiac Disease, it can take up to 6 months for the immune system to calm down after gluten exposure, but the actual gluten should be out of the system in around 4 weeks.

      Doctors usually order the TTG igA antibody test. But if you do it yourself privately, I would order the full panel (that's what I did), including the Anti-Gliadin IgG.

      I absolutely agree. I also delayed my healing by cheating. It takes up to 6 months to heal after each episode, so if you never stop cheating, your body will be under attack all the time. And yes, there are a lot of links between gluten intolerance and Hashimoto's. Also Celiac Disease often together with Hashimoto's.

      In fact, candida seems to have been the real cause. Interesting that you said it. I've been addressing it and I'm starting to feel better than I've ever felt.

      I did look into the Root Cause Protocol in the past, and while it has a few great ideas, a lot of them are radical and even dangerous. I don't agree with it and wouldn't recommend to anyone to follow blindly.

      I think I would rather go to jail than do that RC protocol and take so many unnecessary supplements. Any high fat low carb "ancestral" diet is bad, and it's completely false that plant foods can't give you enough Vitamin A. I have never eaten organ meats or taken cod liver oil or eaten any other Vitamin A rich animal foods in my entire life, and my Vitamin A levels are completely normal, I tested them. Sweet potatoes are probably the best food to get more Vitamin A. Even if someone has a lower ability to convert beta carotene into retinol, eating enough of them would overcome that problem since they're so high in beta carotene.

      @@dj-fe4ck That is really great to hear about your Vit A score. You must be very healthy to have that kind of conversion. From what I understand, most people today are lacking that ability. I love sweet potatoes as well and believe that plants are a healthy part of a healthy diet. The one thing that I found noteworthy in my journey of study, historically speaking, no population of people ate only plants for multiple generations.
      Beef liver and cod liver are both high in vit A but they are not the only foods high in vit A. Grass-fed butter and and cheese are also high in vitamin A. I have often thought about the question, "Where do animals get their vitamin A?" from Plants right? The one thing that really stands out in my mind is they also have a different digestive tracts than we do. For example cows, sheep, goats, deer and elk have multiple stomachs. And gorillas have specialized appendix or something that helps in their digestion as well as a huge "gut" that is the bulk of their body. They also spend most of their time eating and digesting, eating and digesting. Wish you the best, we are all striving to be well :)

      I did, and I concluded that I have a little bit of an issue with lactose, so I avoid dairy with lactose but I'm fine with mature cheeses and yogurt. I've also reduced the amount of dairy I eat and prefer goat and sheep products rather than cow. As I seem to be doing very well now, I'm not really willing to cut anything else out, especially as I'm breastfeeding and need plenty of food. I don't want to be losing any more weight.

      Of course not. You can just eat potatoes, sweet potatoes, fruits, and greens, that's as high carb as you can get. That's what I'm doing now

      No, it's not low carb at all. You can eat gluten free oats, rice, buckwheat, millet, lentils, beans, potatoes, etc. There are plenty of carbs you can eat.
