    My father started mid range marriage hall and catering business with his hard earned money in 2006.. Only thing we had is land on which its standing.. Rest he did from scratch, all his retirement corpus and large loan.. Its still standing only and only because of his passion , hard work and attempting 100 percent customer satisfaction😮 Yeah.. attrition rate is very high.. Cant let the guards down anytime

    Restaurants are like automobile makers, extremely high capital expenditure and high operating expenses, while revenue takes a while to play catch up. It requires brutal capital allocation, items on the menu that aren’t high gross margin should not exist and slow moving items must be starved of capital to allow them to die, the fast moving stars should be fed the most capital and nurtured. Ensure your product scope is initially only the food and make that perfect. Your repeat customers will forgive you for everything if your food tastes consistently good. Your interiors can be slowly improved with your cashflow, bit by bit. Hire people who have a passion dealing with people for the restaurant and hire good consistent disciplined chefs for the backend. As an owner be on premises and be paranoid.

    Secret to successful restaurant is owning your place...bcoz it takes an average 8 year to get your feet strong and 3.5 yrs to take your first breath... you can only last that amount of time. When you dont have to pay the rent. You just cant stand the rent in slog times even if it is Just Rs.35000/-per month so forget about lakhs of rupees in rent.

    In general it is hard to do business in india, considering the margins and monopoly of big businesses.

    In think this applies to only metro and tier 1 cities. In my howntown, a tier 3 town, 9-10 small restaurants in my locality are running since ages.

Nikhil can we meet some day would you be happy to do something together to break the duopoly ,already into food business cloud kitchen, having a brand name Biryani Khansama,where veg biryani exists yes its a pure veg biryani brand. Have started this after quitting my job of CS of 6years.

    I feel in restaurant business it's about what suits the demographics taste. The ones that fail the most are copy case because the authenticity is not there & no substantial offering either. That being said, a restauranter needs to be flexible & adaptable to what the customer wants. Lastly, compromise on quality is least sustainable. Other factors behind failure is wrong location, poor seating/dine-in experience, staff behaviour & value for money quotient.

    If you really want to crack the code then hire some of the top Maharajs of India and club them with an ace chef with international experience and then see the magic.... maharaj and his team will do the cooking and chef will do the presentation(plating & menu planning). Steal this idea and knock it off. Trust me you wont fail.

    People forget that India is a predominantly Vegetarian food eating country....yet there is absolute lack of Passion in CHEFS and culinary professionals to play with veggies.... just a handful of then have just tunned into the veg scene. Mind you...the biggest pockets of India who are willing to spend are Jains....but they are just blatanly ignored.
    Please please get over with cheese and paneer.
