It's not just Kavod HaRav himself that said. The Torah said it. Moshe Rabbeinu gave Noahides only 7 laws which are written at Sanhedrin chapter 56, if I'm not mistaken, read the entire chapter as it may have the reason why Noahides can't keep Shabat. Have good studies!

If you didn't convert to Judaism you need not - and cannot - keep Shabbat. It says in the Torah "it's a sign between Me and the Children of Israel", meaning, exclusive for the Jews. Plus, it's forbidden to fast on Shabbat, there's no such commandment of fasting in the Torah, quite the opposite - Jews should eat the best food on Shabbat. I'd kindly suggest you to read about the 7 Laws of the Children of Noach. You need not be a Jew, you may be a righteous gentile and enjoy your Next World in a good place.
