Jennifer Garner's Pretend Cooking Show - Episode 24: Biscotti

- I must ask you to pardon my quarantine brain and weird space buns. Otherwise, let’s make Cook's Illustrated Orange-Almond Biscotti.
Ingredients:
2 cups AP flour
1 tsp baking powder
1/4 tsp salt
4 Tbsp unsalted butter, softened
1 cup sugar
2 eggs
1/2 tsp vanilla
1/4 tsp almond extract
3/4 cup whole almonds, toasted and chopped coarse
2 Tbsp minced zest from an orange
Directions:
1. Adjust oven rack to middle position and heat to 350°. Whisk flour, baking powder, and salt together in medium bowl; set aside.
2. Cream butter and sugar together until smooth, about 2 mins with mixer at medium speed. Beat in eggs one at a time, then extracts. Stir in toasted and chopped almonds and zest. Sprinkle dry ingredients over egg mixture, then fold in until dough is just mixed.
3. Halve dough and turn each portion onto an oiled cookie sheet covered with parchment. Using floured hands, quickly stretch each portion of dough in a rough 13x2 inch log, placing them about 3 inches apart on the cookie sheet. Pat each dough shape to smooth it. Bake, turning pan once, until loaves are golden and just beginning to crack on top, about 35 mins.
4. Cool the loaves for 10 mins; lower oven to 325°. Cut each loaf diagonally into 3/8 inch slices with a serrated knife (normal-ish cookie size). Lay the slices flat, about 2/3 inch apart, on the cookie sheet and return them to oven. Bake, turning over each cookie halfway through baking, until crisp and golden brown on both sides, about 15 mins. Transfer biscotti to wire rack and cool completely.

As I can see, you cooked a particular kind of biscotti that in Italy we name “cantucci”.. cantucci & vin santo should be the original winner match, as I recall..but I live in Verona and we usually dip “i cantucci” in another sweet wine, Recioto. I did it! They turned out amazing! The heel ends were super crisp after the first bake and I devoured them. The rest of the slices were just outstanding after the second bake. Half went to co-workers and I greedily kept half at home. This was so much fun!

Jennifer, you, Birdie and your videos are so much fun to watch. You remind me of myself when I get flummoxed especially with new recipes when I have taken a photo of them and I have to enter the password on my celular every couple of minutes to read the recipe… duh. I love my small air fryer my youngest son sent me for Mother’s Day during COVID lockdown. It toasts nuts and seeds in a couple of minutes so much easier to control than an oven. If you don’t have one it is a blast trying out new taste healthier recipes like my son and Did when he came for a visit.. You can air fry almost anything in it. Thank you Jennifer

Awesome! But Jennifer I have 2 suggestions. Brush the outside of your loaf with egg whites which will make it shiny, and take a 1/4 of the almonds and grind them finer so the almond taste is blended with the flour mixture. Take it from a camera dude in Toronto, Jennifer is a beautiful soul.

It's called an apron, so you don't get food on your clothes, and its called a towel, used for drying wet hair so water doesnt drip on surfaces....also when cooking we abstain from touching excess areas on body for hygenic reasons

@@diopets I can give you the name of each cookbook up to, but not including, the one Jennifer used in this video unfortunately. I did try to figure it out and bought one online with Amazon (used) but it wasn't the correct one. I plan on checking out a few second hand book stores with the above noted recipe in mind as the name given in the video wasn't enough to source it correctly. Please let me know if you find it!!

Roasted Hazelnuts and Roasted Almonds, add zest of 2 oranges 2 lemons 1 lime. 1 teaspoon ground anise seeds. Roll logs and flatten to 3 inches wide and 1 1/2 inches tall. All optional .🤓😛
