Yes you can. You can book one genie plus at a time as well as add two paid (individual lightning lanes). If you are an on-site guest, you can do all three selections at 7am. Genie plus lightning lanes can continue to be selected throughout the day but the paid (individual lightning lanes) are a max of two per day. If you are at Epcot you could also try for a virtual queue. That can give you quite a few options at the start of your day if you got them all.
