Small tip I learned in culinary school. Don't salt the steak until it's right about to go on the grill or pan. Salt is a dehydrator and draws water out the steak while the steak sits out.

Gordo, I never used a thermometer. I’m going to pick one up. Love that you used grape seed oil. So right! When you have a good steaks .. A little salt, pepper, garlic and maybe fresh herbs. To bring out the flavor.I cook my steak in butter . Cast iron skillet the way to go
