I understand using the marking down the middle and then sew on quarter inch from the center. Makes it much easier and makes the measurements come out exactly you are so informative.

I believe we should say that we sew on both sides of the line. If we say 'either side of the line ' means we can sew just one, which is not correct for this demonstration. Thank you very much for sharing.
Grammatically, either can absolutely be used correctly in this instance. Either can be a determiner before a singular countable noun. Either can mean both. Thank you very much for sharing your opinion. I presume you are American? One must remember that theirs is not the only language on the planet, and certainly not the oldest.
