    Lemon-Lime Soda (Sprite/7-Up) Recipe
    20 mL Lime Oil
    6 mL Lemon Oil 5-Fold
    3 mL Citral
    450 mL Dilution Medium
    Citric Acid Solution
    1/3 cup Citric Acid
    1/3 cup Water
    Combine and stir until dissolved.
    Simple Syrup
    3 parts Sugar
    2 parts Water
    Combine and stir until dissolved.

    wow... it tastes exactly like sprite, but like you notice that hint of aromatic key lime and the extra acidity does add to it. I used tangerine instead of citral and it worked out.

    Hope this is helpful for anyone who is very visual like me. Thank you for listing the ingredients above, but this is "for the idiots like me" written instructions. 😂
    Ingredients
    400ml of Vodka
    50ml - 80ml Glycerin or 50ml to 80ml Propylene glycol (Not sure about the glycerin here, he mentions the measurement for propylene, and Google recommended generally more propylene compared to glycerin, so if you are going to use glycerin, maybe a little bit less?)
    3ml of citral
    20ml key lime oil
    6 mL Lemon Oil 5-Fold
    100ml citric acid powder
    100ml water
    1 litre (500ml) of simple syrup
    Instructions
    Stage 1: Create Solvent
    Add 400ml Vodka to bottle
    Add 50ml to 80ml Propylene glycol to vodka
    Set aside
    Stage 2: Essence
    Add a little bit of above made solvent to the bottle
    3ml of citral
    20ml key lime oil
    6 mL Lemon Oil 5-Fold
    Add remainder of solvent made in the first stage
    Stage 3: Make Citric Acid Solution
    100ml Citric Acid powder
    100ml water
    Mix it until it's clear
    Stage 4: Separate the Oil from the Essence
    Stage 5: Make Lemon-Lime Syrup from Essence
    20-23mls of essence
    1 litre (500ml) of simple syrup
    Shake well
    Mix Drink
    1ml of liquid citric acid solution
    7 oz of carbonated water
    1oz of syrup

      Thanks. Root beer is in the queue, tonic is a bit harder because quinine is regulated in most countries (it is a prescription drug in North America). And though I have cinchona bark, tonic made from it tastes like dirt.

    Im loving this channel. Planning on testing this in alcoholic cocktails to see how it goes.
    I couldnt find key lime n my country (I've found citral, but not sure if's food grade). Shipping and taxes are prohibitive to bring it from abroad.
    Which oils do you recommend for using in place of those 2 ?
    Also, is the 5-fold lemon substatially different to regular 100% natural lemon essential oil?
    In case I use the regular one, should it be used in the same amounts as the 5-fold or should I increase it?

    Love the content, and have been experimenting with making my own sodas (made a strawberry and a orange so far)
    Could you use the sodium benzoate preservative solution to extend the shelf life of the citric acid solution (a few drops like you did with the tannin solution in the sugar free simple video) or would the PH of the solution not work with that? How long would the citric acid solution last without preservation (a month or so)?

      Yes you can. I even add a small amount of citric acid, in the other direction, to the preservative solution to give it a pH of 4.0ish.

    Hi darcy, thank you for such amazing content 😊 I'm from the UK and have been looking for citral, all I can find is aromatherapy grade oil for this, could I use organic lemongrass oil instead or are the aromatherapy grade ones still OK to use in small quantities?

    Also, would substituting 100 proof/50% ABV vodka or even everclear at 95% ABV work as a substitute for the propylene glycol or glycerin? is there any unique property of those two non-ethanol organic solvents or is this just to make 40% ABV adjustments easier?

      50% abv vodka will always be your best friend for extracts. It doesn't over extract the water insoluble materials, and gets all the flavours. If I only had access to 40% vodka, I would add 10% to 20% by volume of propylene glycol to the vodka and that would make it a better solvent for extract. 95% Everclear over extracts, so you should always dilute it, so 600 ml Everclear plus 400 ml of water gets you just below 60% abv.

      Citral is a liquid, you would have to bind it to something like a sugar or starch to make it a "powder".

    I love me some lemon lime flavor...but I've been cutting back on sugars so I mostly drink flavored sparkling water nowadays with actual Sprite or 7-Up being an occasional treat due to the high sugar content. I've also kicked high caffeine in my 20's (late 30's now) so most sodas are out for me unless I take up to making my own to cut out caffeine, most of my intake of that comes from black tea..which in my case is unsweet cold tea more often than not. In my younger years I was addicted quite badly to Mt. Dew and needed at minimum 24ozs a day to function without starting to suffer from caffeine withdraw....I usually had anywhere from 3-4 cans a day on average with sometimes going up to 5 during the summer.

      The high sugar levels are worse than high caffeine levels. Most of the soda I make here is half the sugar of commerical products. In the next few weeks I'll be doing a video on low sugar/calorie methods. Cheers

    Do you need to separate the essence from the oils? Could you just add Gum Arabic to bind the oils into the water?

      I prefer to separate out the oils because creating an emulsion of the oils with gum Arabic is more difficult than people realize.

      Maybe, depends on how dilute the extract is, and typically if you look at grocery store extracts they are about 10 to 20% oil and the rest is alcohol.

    I was wondering, if used higher proof alcohol, would you need the propylene glycol? In some videos you use it, in other you don't.

      Yes, 50% to 60% abv is ideal, but many people only have access to vodka at 40% so that's why I suggested adding propylene glycol to boost the solvent power. If you can get 50% to 60% abv then no propylene glycol is necessary.

      @@1Garyguitar1 definitely benefits to removing the oils. The terpenes will dissolve in alcohol but once you add that alcohol to a syrup or soda they will come out of solution.

      Well 1 part blue powerade zero to 3 parts mtn dew is perfect. Did a blind taste test with a group of friends and they couldn't tell the difference between the real one and the one I made

      Serving solid means adding the carbonated water to the glass first, then slowly pouring the syrup into the soda water. If done right, the soda water doesn't foam, keeping most of its carbonation. And as long as your syrup is not too thick, it will mix uniformly. It was the preferred way to serve many drinks, specifically Phosphates, at soda fountains in the late 1800s

After your lessons i reconsidered my approach to serving soda drinks - it makes it more proper and more traditional like in a good old days ) we also had a soda machines in Russia in 60-90th when i was kid, mostly sweet in a hard highball glasses that no body actually took away ) what a nice time it was ....
