    OMG! you made me remember I used to have huge crepes on sunday for breakfast when I was a child in London. We moved to South America and I struggled for 20 yrs to eat my crepes with strawberry jam... One day I found the lemon curd recipe. I run to my dad to tell him I had found it. Almost 30 yrs after I have an important day, another way to make lemon curd. I got my IP a month ago and had never imagined I could make Lemon Curd in an IP. Thank yoy so much!!!

    Hi Flo. Made this today for first time. I used the Vitamix to mix everything then into glass bowl with foil cover for the 5 min + 10.. whisked it hard and it is smooth as silk. Covered with Saran Wrap so that no skin would form. Can’t wait until it is cold. Thank you so much . Hope you and the family are healthy and safe. Arlene❤️❤️❤️

    I made Lemon Curd in my Instant Pot. Really good. Thanks for sharing how to do it. I used it as a filling between layers of white cake and taking it into work.

    Hi, I will definitely be making this recipe. So much easier than making it on the stove. I like to take a few Tablespoons of lemon curd and about 4 Tablespoons of fat free cool whip and mix together, makes a yummy lemon mousse.

    Oh boy, this could be trouble!!😂 I love all things lemon. I didn't know it was so easy to do in the Instant Pot! I just but a jar at the grocery store. I serve it on pound cake, with a dollop of raspberry preserves and some fresh berries. I make my granola, too. It goes fast in this house!

    Can't wait to try this! Have to finish the lemon curd that I canned first but this will be a lot of fun not standing over a hot stove worrying about scorching the curd. Thank you! I have made cranberry curd in the past and gave some to a friend who loved to dip potato chips in it. You might give something salty like that or a pretzel a try too.

    Great recipe!! Hint for easy yogurt making if you're the only yogurt eater: use boxed, shelf stable milk (1 qt) + 2 Tabs live yogurt. No need to preheat/scald the milk as boxed milk is yogurt-ready. Mix together in small IP on yogurt setting (110 degrees) x 12 hours. Strain if you like. Shelf stable milk is only $1 at my Dollar Tree. Works with almond milk, soy milk (but soy is not my fav), and other types of milk as well.

    Flo! LOVE that I now know how to make Lemon Curd in the IP !!!! Do you know what I use it MOST for????? I mix it in with my Greek Yogurt for BETTER than store bought Lemon Yogurt!!!!!! Have you tried this yet?????? !!!!!!

      Not sure. I've never made lemon meringue pie before, although I love to eat it! Definitely like it in flavour but I think lemon filling in pie is thicker.

    Is a sugar substitute (like Stevia) allowed when making this curd. Have been a long time fan, You guys do a great job.

    Oh. My. Goodness!
    Lemon Curd
    1/2-1/3 c fresh lemon juice
    Zest of 1 lemon
    3 eggs
    1/4 c softened unsalted butter
    3/4 c sugar
    Pinch of salt
    Blend all ingredients.
    Pour into heat safe bowl.
    1 cup of water into bottom of Instant Pot.
    Place in Instant Pot and cover.
    High pressure 5 mins.
    Natural release for 10 mins.
    Take out and carefully remove lid.
    Whisk lemon curd.
    LOVE the topping ideas! Thank you for sharing this recipe!

    Does the hand blender blitz the zest enough that you can't feel the texture? I don't use a blender so I usually have to strain the zest out when I make lemon curd

      Meyers are my favourite! I believe they are a cross between a lemon and an orange. The aroma is intoxicating! They are less sour/more sweet than regular lemons. You'll have to look for them.

      I noticed it;s a bit grainy too. It's probably because the painstaking way of making it slowly over the stove is to prevent that sort of thing. 🤔 I haven't tried another method.

    I bought a set of Pyrex mixing bowls. They came and the directions said they were not to be used in electric pressure cookers. I have a small stainless steel bowl that might work to make your lemon curd. Can you tell me approximately how much liquid goes into your dish? I can hardly wait to make it.

      I would agree that Pyrex is not made the way it used to be. I have heard that people have experienced them bursting in the IP. Mind you, I have had one burst in the oven before. Not sure what you are asking re: liquid. Do you mean how much water I put in the IP which is about a cup? Over all, it makes about 2 cups of lemon curd. Hope that helps.

      Flo Lum That is what I needed to know. It makes about 2 cups of lemon curd. I feel so silly. I actually have a set of stainless steel pot in pot utensils which will definitely work. I am going to make the lemon curd right now.

      Flo I made the lemon curd using my stainless steel pot in pot. I used ⅓ cup lemon juice. It’s wonderful. My husband loves it too.

    Eclairs are filled with this, right? I was thinking of topping on cheesecake too and it might be good mixed in yogurt. Flo, in regards to making yogurt in the instant pot, like you said you could make smaller batches and even strain to make Greek yogurt and the batch is even smaller. I like it on baked potatoes too. I buy Stonyfield organic probiotic plain whole milk yogurt because of the type of probiotics it contains. Get it home and spread it in an ice cube tray and freeze, then put in freezer bag in freezer and each cube will be enough to make a whole gallon of yogurt- probably 1/2 gallon Greek. But you can use a cube to a smaller amount of milk. Even after you fill the tray you will have some left over to eat now. Here's another thing you can add a probiotic pill with more types of probiotics in with the cube - thawed, and milk with everything mixed in well for even more healthy product. I am looking for recipes to make fruit yogurts that compare in flavor to store bought because I watch my little granddaughter every school afternoon and summers and she loves it. Frozen brand of course from the movie lol

    Now folks be very careful not to make a spelling mistake here 😨otherwise it's lemon turd 😂💩💩💩
    I weekly make Greek yogurt in the IP ,just half litre,semi skim uht milk,two scoops plain natural yog as starter,whisk in evaporated milk to suit your taste .
    8hrs or so later ,chill then sieve mmmh mmmh 😊

      I love Greek yogurt and have to say the best yogurt I ever had was in France, the store bought stuff was amazing but I also got to taste someone's homemade version and it was delicious!!! I may have to see if I can make small portions just for me that is not too much work. And as always, Bridget, you crack me up! Have a wonderful weekend! 😘

      So I made this yesterday, used two eggs and added a tablespoon of honey to the mix. the honey gave it a real nice subtle texture and taste. my girlfriend is making thumbprint cookies with the lemon curd in the center of the cookie..

    Ouch!!! I was really liking your recipe until I saw the sugar and aluminum going in. You realize refined suagar is one of about 3 or 4 major causes of chronic disease in this country, right? You know aluminum is a neuro-toxin, right? I WOULD NOT cook aluminum under pressure!!! Personally, I LOVE sweets but I do not even buy sugar any more. There are too many natural sweeteners around.
