  • Today I tried to see if I could make vegan fried chicken from grapefruit peels! I came across a video from Sauce Stache & other people online making chicken from grapefruit peels and noticed they were all using eggs or milk. So I wanted to test out to see if I could make this Vegan! Let me know in the comment section what hack you want me to test next :)

    I've experimented with this to death and here's what i learned:
    1. Marinade will not get rid of the bitter taste, no matter how long you soak it.
    2. To get rid of the bitter taste, it's a bit of a strenuous process. You will have to bring water to a boil, then blanch the piths for about 15 minutes, then drain the water, and squeeze almost all the water out of the pith (without squishing it) and repeat at least 4 times or until the pith is no longer extremely bitter.
    3. With the blanching process, you will have to be very careful not to over cook it, or else the texture will become literal mush. What you could try (don't remember if i did this or not) is only blanching the pith once so it becomes absorbent like a sponge, then soak them in cool water, and do the process like the blanching method without risking over cooking.
    4. The flavor is in the marinade. The only flavor the pith provides is grapefruit. Once you're done removing the bitterness, soak the piths in a delicious marinade. At this point, the piths will be very absorbent, so make sure you squeeze out enough marinade, so that you don't have soggy fried pieces. I suggest squezzing until almost dry, otherwise the frying experience with be horrible, and you'll gry soggy pieces.

      @@nyxnightlinger7719 lol, I don't crave chicken. I haven't in 6 years. I just like to experiment with food, and i wanted to find a way to make it work. And yes it is a lot of work, which is why i don't do this anymore unless i happen to have a lot of grapefruits and time. I simply love to cook.

      @Kieran Jones i was sharing tips on how to make it palatable. I don't crave chicken. If i eat vegan chicken, it's because it's convenient, and I'm too lazy to cook.
      I've been vegan for almost 5 years. I recently had blood work done and the only issue i had was low vitamin D which is expected, since I'm African American. I also had high cholesterol which seems impossible as a vegan, but it's genetic. My dad has it, and so did his dad.
      But I've been vegan too long to worry about the anti vegan speech. Eat meat if you desire, I don't care. I just ask you respect my decisions as well.

      WAIT ! As i was very small, (in the kinder garden!), my teacher was a black woman from the Caribbean.
      One day i tried ti peel my orange or my grapefruit, because i had a lot of white skin left on it.
      She told me to let that one the fruit, because it is very healthy. I asked her for what it is healthy (i had obviously already interest on food science at this young age... =) ).
      But she just said, "Oh, it's difficult to explane, but it is specially good for women."
      I didn't forget it, but i didn't take the time to research.
      Maybe it is somehow true.

      Try cutting grapefruit this way. Cut in half. Each half: use serrated knife to cut half inch spiral at angle to 'core' until only 'core' is left. You should end up with long torqued strip. Looks like shark's teeth. Pull it out straight and cut into about 1.5 to 2 inch sections. Bite the flesh off down to the pith. Don't bother with sectioning each bite. Kids may enjoy this more than you! Then, for your use only, rinse the peel, freeze and accumulate with other citrus peel. Use in Vitamix smoothies with frozen bananas, protein powder, any spare fruit and frozen watermelon rind, dairy or plant milk, maybe cocoa and vanilla.I also freeze into cubes as a treat.

    I feel like I wouldn't serve this as an entree, but it could be a fun snack with a dip. It didn't seem too hard to make. The best way to cut bitterness is with salt, so marinating in something salty would probably help a lot.

      The point with this dish is that it's food for times when there really wasn't any, and people start eating grapefruit pith and banana peels, fried and spiced up to give the feeling that you are actually eating "real food". Now, there's also quite a lot of nutrients and fibers in grapefruit pith, so it's not just an illusion, it will keep the hunger away, too.

      @Kieran Jones Well this is not a substitute for grilled chicken but fried chicken nuggets which is very unhealthy too. If you want a healthy substitute there are several other options too that are way better for the environment and do not cause any suffering

      we do a jackfruit curry in south East Asia. It's yummy! But it definitely smells and taste fairly sweet.

    Looks interesting. I would soak it in a mix of no chicken stock and pickle brine like chik fil a does, but no longer than an hour so the acid doesn't change the texture.

    You need to peel it more- there were still small spots where you missed and it wasn't completely down to the pith, that's prolly why it had the grapefruit taste and bitterness in some spots

    This is fascinating. I would just make it as its own 'thing'- and if it sorta kind tasted reminiscent of chicken that's great. A new appetizer and a use for grapefruit peels instead of chucking them in the compost!

      It doesn't taste like chicken. It tastes like grapefruit pith. Most people don't eat this if they have anything else to eat. BUT - some people like the bitterness of grapefruit pith, and some people say there's great health benefits in eating it.

    The best way to cut any citrus fruit, is to cut the ends off. So I'd first slice the top and bottom of the grapefruit so that it can sit flat on either side. Then I hold the grapefruit in my palm & with a knife I cut anywhere from 5 to 6 slits all the way around. I put the knife down, and with my fingernail, I pull the peel back from the top like a banana peel. And I continue to pull down til I get all around the fruit slits I made. I like to go slow bc I can make a clean pull so that none of the fruit is left on the peel. For this recipe, I'd likely have to shave the waxy outside first and then start my cutting/peeling technique. In any case, this probably wouldn't remove any bitterness from the fruit, but it'd at least eliminate the scooping process so that the prep is less tedious. I'll have to try this recipe & report back.

    Yaaasss!!! Love this idea...especially bc I've been to Cuba and I'm obsessed with anything that originated there. They are so resourceful! Even in 2015 when i went they had scarce resources but still made delicious food non the less! I'm going to try to this 🙌

    You know what I'm thinking is to try recipes like this and not so much compare to the meat, but that's because don't have craving for meat since I stopped eating it..     This is a hard times meal is other countries as well. My mom is from Nicaragua and they would eat any form of citrus peal when the crops failed that year. I also grew up eating orange peals done similar to this but in small match stick size. Loved this video!

    I don’t know if anyone ever mentioned this, but there is a grapefruit spoon that is serrated edge to help remove the innards.
    So if you enjoy grapefruit often, it may be a good investment

    Try lemon pith instead of grapefruit (with the lemons that have that thicker outer peel). Also, can this be airfried or baked instead of deep fried? If so, how long/temp? I would cut into quarters and peel off the pith to simplify the first part of the recipe. Thank you for the idea!

    This is amazing. Really. It is amazing. I am definately going to do this recipe. I dont think there is much nutrition but it would be a cool thing to take to parties and communal meals. I also like that you mentioned juicing the actual fruit so there is litte waste, which is what I will do as well coz I love that grapefruit hit (I guess if you grate the peel and store for zest there would be no waste). I also liked the history. Yes sad for sure, but what an interesting thing to tell people about at whatever event I take them to. People usually say, "Oh you vegans are always making fake versions of the real things." Now I have a back story that can change the conversation to world politics or poverty or travel or many other things. Loved it tons, you can probably tell. Thank you.

    Hey, Candice. I made your soy curls popcorn chicken last night, AND used the same flour blend for oyster mushrooms today. Soooo good. I think I'm gonna make grapefruit peels these with that method. Have you tried that yet?

    You can buy a grapefruit spoon. It's serrated and cuts the sections into perfect little triangle shapes. :)

    If seasoned and spiced well with spiced will be a substitute...it can be soaked and squeezed out after hours to remove bitter

    I have been wanting to try this since I saw emmymadeinjapan do it. If you have access to pomelos I think that would be a great one to try. They have a lot of pith & grapefruit flavor without the bitterness.

    About the nutritional value: Grapefruit pith is high in fiber, vitamin C, flavonoids hesperidin, diosmin, naringenin, quercetin and kaempferol; this is what gives it the bitter taste. There's copper and potassium there, too, and in pink/red grapefruits there's lycopene.
    Preparing method and spices/flavorings add their own values - or remove some of it.
