Electrolux/Dometic and Truma devices have been used in motorhomes and campervans for a very long time. The fridge will need a full service. You will find plenty of CZcams videos covering what to do. Basically you will need to clean the flue, and clean the burner assembly. The gas jet will need to be removed and cleaned with brake cleaner and compressed air. Do not use any kind of probe to clean it. This will damage the jet. Fridge parts if needed should be easy to obtain. The fridge works best on mains or gas so always precool it before travelling. The 12 volt heater used in the cooling circuit is low powered to ease the load on the 12 volt system so will keep the fridge cold while driving but will not cool the fridge from warm. There will be a circuit enabled when the engine is running to provide the 12 volt supply to the fridge. A second circuit will connect the leisure battery in parallel with the starter battery to charge the leisure battery when the engine is running. These circuits are switched by two relays usually found in the engine compartment. In the video you showed the hot water boiler. The yellow valve is used to drain the boiler. Do remember to drain all the water in the Winter! I hope that helps get you started. It's going to be a great project.

They can be quite a nice way of providing affordable touring holidays and short breaks for people without too much money. Modern camper vans are really lovely nowadays, but oh! the prices for them, so it's really worthwhile to keep an old one going - and they keep their prices well.
You should definitly check the windscreen fender corners where you see a "little bit" of rust. Those a common to reveal huge hole under the windscreen when they actually look like nothing from outside.
It is somehow oddly satisfying to see things getting cleaned up - i could easily watch you do that, especially on such a nice buy - maybe it is because it feels like it deserves it. And it is always nicer to watch a clean car, even though i know that that thing isn't your primare goal on this channel of course. Nice to see your succes!

The fridge wants a new ignition, It's a spark unit from Electrolux a common part. That's the start of what could be a problem, you'll need a serial number from the fridge to get the correct part. This is if you are running off LPG. You normally chill the fridge down with gas before switching to mains if you are hooked up to mains .12v is what you switch to if driving a distance and the leisure battery is switched to charging.

"Moisture in the headlight" seriously.... what if it has a bulb inside a reflector, and lens? They always get condensation on cooler days, until they get warm inside. (Old moped, and motorcycle lamps, non-sealed lamps always do that...)

The fridge usually runs off 12V dc or 220V ac as well as gas so maybe worth of try when you connect the van to the mains.
