For Pasta:
1 & 1/2 cups - of Faralle Pasta or your favorite pasta
1 cup - English Cucumber thinly sliced seedless
1 Pint - Cherry tomatoes sliced
1 cup - Finely chopped red onions
2 tbsp - Packed fresh parsley chopped for garnish
Fresh ground pepper
Olive oil
Croutons with salt & Pepper
Avocado Dressing::
2 - Avocado
1 - Lemon Juice
1 tsp - Salt
1/2 tsp - Black pepper powder
1 tbsp - Ginger powder
2 tsp - Garlic powder
1/4 tsp - Chili flakes optional
1/4 cup - Fresh or dried parsley chopped
5 tbsp - Vegan mayonnaise
2 tbsp - Fresh cilantro chopped
