How to BBQ the perfect picanha steaks on a Weber

- In this video I show you how to make a perfect picanha, or Brazilian steak.
I start with the traditional Brazilian cut of rump cap, then reverse sear it on a Weber kettle grill.
By cooking it this way, we end up with a more even doneness and tender piece of meat overall.
Grab a drink or two, sit back and watch how I create a perfect steak, it is so easy even my dog can do it, well, maybe not the dog as she has no thumbs and you need thumbs to operate tongs.
Ingredients:
Rump Cap sliced into 2.5cm (1") thick steaks
Fresh Thyme x 2 sprigs
2 teaspoons of crushed garlic
2 tablespoon of unsalted butter
Hydration:
1 x beer

I usually cook it whole and reverse sear it in the Weber. Comes out beautiful. Yet to try it sliced into steaks and cooked on my Weber rotisserie

Did you leave the bottom vent nearly closed for the sear portion of the cook?
Yes I did but for no real reason apart from the lid was off, so the fuel was getting plenty of oxygen, if I had put the lid back on, I would have opened up the bowl vents fully @bks7842

Guess there are no patches out there for your kind of smoking. SEARiously good looking steak. How much for a cut like that? Might fit it in as a freedom bbq after all of this. Got to adjust the beer timer for it though.
100% spot on, there is no cure for this type of smoking Cleaver#351. It was a bit over $40 a kg mate, but oh so worth it for a treat 🍻
