They're singing in the same vocal syllables as Oxxo Xoox, it's a made-up choir/vocal dictionary, they even assigned some general meaning to each made up word to kindof get a feel for what they're implying with the singing.

The instrument in the beginning is called an Oud. It is a Turkish instrument similar to a western Lute.

I cant guarantee, but i read many times that they sing in their own languaje.
