  • 1 lb Navy Beans 1/3 cup molasses
6 cups water 1/4 cup sugar
1/2 tsp baking soda 1 tsp dry mustard
1/2 lb salt pork, cut in 1/2 inch pieces 1/4 tsp ground black pepper
    1 small onion, peeled
Soak beans overnight with the 6 cups of water in a large kettle. The next day add the 1/2 tsp baking soda to the beans. Place over high heat and bring to a boil. Reduce heat to simmer and cook for 10 minutes. Drain beans in a colander set over a large bowl and reserve the liquid. Put the salt pork, onions and beans in a stoneware bean pot or a casserole dish. In a small bowl combine the molasses, sugar, dry mustard and pepper. Stir in 1 cup of the reserves liquid, then stir this mixture into the beans. Add enough of the reserved liquid to cover the beans-about 1 cup. Cover the casserole/beanpot and bake at 300 degrees for 2 hours. Thoroughly stir in the remaining cup of reserved liquid, cover and bake another 1-1/2 to 2 hours until the beans are tender and the liquid is absorbed.
Serves 8 Traditional New England Style Baked Beans. This comforting, homey dish is delightfully flavored with salt pork molasses, onion, dry mustard and sugar. Boston baked beans have been made this way for centuries and never contain even a hint of tomato! They are the perfect picnic food and pair well with grilled chicken, hamburgers, hot dogs or just served up with a side of cornbread!

I add the ingredients except the salt port and molasses and parboil, Add the beans to the pot, then the molasses and the pork, 4 hours covered and 2 uncovered adding water when needed. Almost the same but I use a bean pot as well, I have 2 sizes. I have tried other methods they just do not seem to taste the same. Now I need to make some after watching this

      I HAVE A QUESTION…
I PREFER TO COOK THE DRY BEANS “BEFORE” ADDING THEM TO THE BEAN POT, BUT HOW LONG WOULD YOU SUGGEST I PRECOOK THE BRINE-SOAKED-OVERNIGHT BEANS ❓
I DO “NOT” WANT TO FULLY COOK THEM, THEY WOULD CERTAINLY FALL APART DURING THE LONG, SLOW, OVEN BAKE TIME, SO ADVICE ME APPROXIMATELY HOW LONG WOULD YOU SUGGEST THAT I PRECOOK THE DRY BEANS ❓
I ALWAYS BRINE DRY BEANS & COOK THEM IN AN ENAMEL COATED CAST IRON DUTCH OVEN, SO I THINK MAYBE 1-HOUR COOKING ON THE STOVE TOP MAY BE ENOUGH, BECAUSE I WANT THEM TO ABSORB THE MOLASSES & SEASONING DURING THE LONG-SLOW-BAKING ♥️ IN THE OVEN…
I WANT THE LIQUID TO THICKEN AND HAVE NO LOOSE LIQUID LEFT…
IT SEEMS I “NEED YOUR ADVICE” PLUS I THINK I WILL “NEED TO EXPERIMENT” WITH THE PROCESS, SO THAT I WILL LEARN TO MAKE A DELICIOUS 😋 CROCK OF BOSTON BAKED BEANS ♥️♥️♥️
      THINGS TO CONSIDER:
I WILL BRINE & SOAK THE DRY BEANS OVERNIGHT…
I WILL COOK THE WELL-RINSED DRY BEANS IN AN ENAMEL-CAST-IRON-DUTCH-OVEN…
I WILL EXPERIMENT WITH BOTH NAVY AND
      GREAT NORTHERN DRY BEANS…
      I WILL USE FILTERED WATER…
I WILL BRINE WITH REDMOND NATURAL
      SEA-SALT…
      I WILL NOT USE SWINE…
HOPE THIS HELPS YOU “ADVICE” ME…
I ENJOY A HEARTY, BAKED BEAN IN VERY THICK SAUCE…WHILE I DO NOT WANT TO DRY 😵😵😵 OUT THE BAKED-BEANS DURING SLOW-BAKE TIME… A LOOSE RUNNY SAUCE IN BAKED BEANS IS JUST WRONG
      😑 😑 😑
I AM CERTAIN NOW I EXPLAINED HOW I WILL BRINE/SOAK THE BEANS & THE HEAVY DUTY POT I WILL USE, YOU WILL UNDERSTAND MORE & GIVE ME YOUR BEST TIPS…SOON I WILL KNOW HOW TO MAKE AN EXCELLENT RECIPE OF HEIRLOOM BOSTON BAKED BEANS
