Does he sell the oysters with shells? Because they can potentially have pearls in them, can't they?

For pearls there needs to be sand. Oysters make pearls because sand get's in their shell and acts as an irritant. Their body fights that irritant and that process produces a pearl. Seeing as how these oysters are suspended in the water column it's not possible.

Years ago i found a natural pearl about the size of a pea. Ive lost track of it over time..

Oysters dont grow in fresh water
