hi, for full fondant covered cakes (chocolate ganache cake covered with fondant dough) you need to keep it in an ac room all the time and not in fridge. for whipped cream cake with fondant decorations only on it after placing the decorations pack the cake in a cardboard box first and then keep the box in fridge. place fondant decorations only little before sending or using the cake.

For kneeding fondant should we need shortening.If the fondant is hard how can we fix that

i dont mix anything in fondant, if its too hard and not getting soft after kneading too then you need to discard it but this generally will not happen if the fondant is wrapped and covered properly in a air tight container.
