    1) How did you avoid Cannizzaro's reaction of cinnamon aldehyde in pH alkaline?
    2) How did you avoid the transformation of aromatic compounds to phenols (yellow, orange colour) in pH alkaline? Also in presence of CO2 a second chain is added.
    3) If you produce acetaldehyde in alkaline solution, how did you eliminate C6H3(CH3)3?
    4) During the boiling the cinnamon powder adsorbs water and it increases its volume 4 times. Also the aromatic compounds are 7-10% in weight. The oil has about the same density of water, depends by temperature. So you can choice the separation method.
Why did you use bisulfate way? The next step is a Na2CO3 solution anyway.

Sheesh, when was benzaldehyde put on the watch list? Used to be a very common chemical, which after all was oil of bitter almond (cyanide removed).

Cinnamon is a mucilaginous producing substance and if not distilled carefully can clog adapters and result in a dangerous explosion, this is why cinnamon should never be put in a coffee Percholator, it will explode from the build up pressure.
The mucilaginous property of this bark makes it very annoying to work with when doing extractions.

@@Amateur.Chemistry so I brought a can of Dr. Pepper and while I can still recognise the smell as benzaldehyde, it reminds me of cherry in this context.

Indeed not very effective, but nevertheless a nice and simple pathway with easy to get components, which I have never seen before. 👍
Benzaldehyde smells like bitter almonds and marcipan, but not like cherries. It gets a rose-like scent if you dilute it absolute ethanol.

Dr Pepper was my soda of choice since I was a kid. M'lady and I used to drink a lot of soda when we were first together, but we cut it out some years ago and started drinking the sparkling waters instead (i.e. La Croix and its knock-offs) and then our neighbor turned us on to the Sodastream which makes it easy to just make your own soda water at home. After about a year of drinking a bunch of homemade soda I've resigned to just drinking plain water now. Sugar is bad for you in so many ways!

It used to taste so much better, but here in the UK we've ruined so many soft drinks due to the nanny states sugar taxes on many drinks, so most changed how they were made. Once again, normal weighted people, who can eat and drink in moderation, as part of a healthy diet, get things made worse to try and stop people getting diabetes and obesity.

Doing a S.A.L.L.E would work fine and not introduce any chemicals except sodium chloride which would only dissolve in the water causing the remaining oil to crash out.
