Yes, fondant is so overused by most cake artists and ends up being more fondant than actual cake. He’s amazing! Also I hate the texture of fondant
What kind of modeling chocolate do you use? I haven't been able to get that kind of texture with the stuff I make myself, and the commercial "Hot hands" I've bought I found out isn't really chocolate, though it's not bad-tasting!
