  • I read that the national dish of Poland is called hunters stew or Bigos. Si I wanted to give it a try. It was actually very tasty. Also I had a small look at a storm Lantern.

    Great looking stew there and one that I will try myself for sure now you have demonstrated it so well. I would never have thought to put prunes and sauerkraut in a stew, but suppose it must be like a western version of sweet and sour. Keep the videos coming for 2021,all the best!

      Thanks Gregor, I washed the sauerkraut but impossible to get rid of the vinegar taste so the prunes I assume offset that and I really think they did, as you say it's like a sweet and sour, I've had to freeze some as there was so much!     Everyone makes their own bigos.
    - I only put sauerkraut as I like intense tastes.
    - My sauerkraut ratio to meat is pretty much 1:1
    - I put wild mushrooms in. I get the dried ones and rehydrate them just like you do. I, however, put them to the pan first, after I seared meat. I do that to deglaze and put all the good juice back to the stew.
    - I also always marinade prunes in wine overnight and then add them in (along with wine) after I put the mushrooms in.
    - Lastly, I put a lot of crushed pepper as I love bigos to have a bite
    Bigos tastes best on the second day. If you refrigerate it and braise it for ~2 hours next day, the ingredients and proteins will have broken down nicely and you will get a lot of additional "umami". I actually stew it for another day for even stronger taste.

    Nice camp and lamp. Save the handles on your LED lamp to use on your Army canteen cups, they work well for picking up and hanging your cup. No holes need to be drilled. Now I am hungry. Have a good New Year.

    Looks like a fine camp meal. I have similar cast iron cookware. Need to try a stew such as this too. I do need to get a better grate for my fire set up. Was that a hunters Enfield cracking in the background? I'd like to think it was fresh 🍖 in the making. Currently shopping for a new Feurhand lantern. Had a small red Deitz lantern over 40 years ago. It got away from me long ago. I just like the old style stuff and the traditional primitive cooking. Best of bushcraft and cooking to you in 2021.

      Hi, thanks for a great comment, the stew itself was actually very tasty. I also bought a shop one for comparrison and the shop bought one was way to vinegary. I got several meal from this too. Not quite so fresh ha ha, mostly shop bought, traditonal would be boar and deer etc. I do recommend the lamp, not the greatest light as you probably know but it lets you see. I try to mix the cooking a bit, but i like the simple bushcraft style too, thanks so much for watching, all the best, Chris.

    Trying to find a flat mature conifer wood in South Wales is like looking for a virgin in a brothel.
    The conifer forests here are tightly packed with a different looking pine trees.

      Hey thanks for viewing again, good luck with your search for a decent pine woodland, I'm pretty lucky where I am, there seems to be all sorts here, broad leaf, coniferous and mixed.     Hey, that's stew for a company 💪🔥. Looked yummy. Loved the oil lamp, looked like a better quality one than the surplus lamps. I'm in for a new lamp, not for advriding or hiking but for hanging outside my van. Had a cheap one but want the beauty of quality. New subscriber / Mattias

    Chris you are a campfire culinary creature if I ever saw one. Watching your videos makes me want to kill something in a forest, cook it on a fire, and eat it! One of those deer running by early in this video would do nicely. Prunes too. Wow! That is a very unique hunter's stew. I know what you mean about fussing over the lamp. It keeps your mind occupied and also will be something that last forever or until we go camping together one day and I accidentally kick it over and break it. 😊 Nice video.

Lot's of deer here, no one seems to hunt them, the hunters stew should really be of wild meats, like venison and boar, I have to make do.     I suppose your hunters stew has a lot of what we Americans might call old world nuances to it. Vinegar flavors mixed with fruit, vegetables, and sausages strikes me as pretty old style cooking based on some early colonial recipes I have seen. Vinegar tends to be common in dishes that used pickled items, but it also was very much used in the old days since it was common and took the place of other spices or condiments that may have been unavailable.

      Hi, sorry I missed this comment which is actually a fantastic one. I love the early colonial recipes and how they have been recorded and we know about some of the dishes, the prunes offset the vinegar I think. I bought a jar of it from a polish shop and it was quite strong of vinegar, my version not so much, but in colonial times they also needed to keep food stored for longer without a fridge, so the vinegar helped.     i don’t mean to be an ass in asking but why not brown the meat before adding the cabbage and kraut?

      Hi, there are many ways to cook this dish and to be honest if I were cooking it in the house for dinner then I would probably do it that way. it was the first time of cooking this dish and I wanted to give the cabbage some time to cook down and reduce in size before adding the meat. As this is for my small youtube channel, I need to do things a little differently and also try offer some form of entertainment, such as frying of different meats, not to mention that I just really enjoy cooking this way. That style has led to your comment which is engagement, which is what I'm looking for. Thank you for the view and thank you for the question, cheers Chris.

    How did you keep the flame fed and hot while you did the meats with the cooking grate over the whole lot?

      Hi Mark, thanks for the question. The Cooking grate or griddle is on legs, probably off camera to either side there is a gap to which I can place wood. The griddle is really handy but a bit rusted now. Cheers for watching my video, really appreciate it, cheers Chris

      Cheers, aye the lens steams up on the inside of the camera, it's really annoying, in my spanish beanz video I produce a tin that I now take with me everywhere, spare matches etc, but I also take a lens wipe, cheers for watching, Chris
