- Join me in the kitchen while I ketofy the Cabbage Soup Diet Recipe! We’re going to make this in the crockpot and this is my meal prep for the week as I’ve been relaxed lately so hoping to kickstart weight loss! I’ll be eating this for lunch or dinner or both each day this week. I’ll put my weight loss results in the comments, so be sure to check back!

Recipe:
1# Ground Beef
64 oz Beef Broth
1 1/2 C Water
2 Cans Diced Tomatoes w/green chilies
1T Tomato Paste
1 Bag Frozen Riced Cauliflower
4 stalks Celery diced
1 med Onion diced
1 Green Bell Pepper diced
4 oz Mushrooms diced
8 oz. Fresh Green Beans cut in small pieces
1/2 Head Cabbage cut in small pieces
1 tsp Garlic Paste
1/2 tsp Pink Salt
1/4 tsp Black Pepper
1/2 tsp Oregano
1/2 tsp Garlic Powder
1 tsp Onion Powder
2 tsp Parsley
2 tsp Chili Powder
2 Bay Leaves
Directions:
Brown ground beef in skillet and season with salt & pepper, drain when cooked. Turn crockpot on high and add cooked ground beef, undrained diced tomatoes, fresh green beans, uncooked riced cauliflower , seasonings and beef broth. Cover. Now sautée the rest of the veggies except the cabbage in about 3 T avocado oil until translucent. When almost done add garlic paste and sautee another minute. Now add to crockpot, stir, then add all cabbage and stir. Put in 1 1/2C water, bay leaves, cover and cook on high 4-5 hrs. Take out bay leaves before serving. I let mine cool and then out in mason jars for my weekly meal prep. I added extra beef broth when putting in jars as there were a lot of veggies and I wanted a little more broth! I’ll let you know in the comments how my weight loss goes this week!

One thing I've found that makes my cabbage soup absolutely delicious is to use sauerkraut instead of chopped cabbage. If you want to try this, make sure to wring the kraut out. Either put it in a collander or strainer and push it down with a fitting bowl so that the liquid drips into your sink (or into a container if you want to save it), or use your hands to wring it out. I find that there's only a slight bit of sourness left that blends in with the soup and makes it taste even better. I guess you could say it's kinda like putting a teaspoon of lemon juice in the recipe. Since I first tried this, I have ALWAYS made my cabbage soup this way because I like it so much better than regular cabbage.

Someone at my senior center mentioned that, and I had forgotten about it. Since I am looking for ways to make this soup without quite all the chopping beforehand, this kraut idea will be great!
I love your replies to your comments, so encouraging! I think we are forgetting this recipe is for a POT of soup, not being consumed in one serving. I appreciate your keto take on the diet, as I was hoping to add a protein into mine and complete it for 7 days. Awesome results!

That is so true, we aren't eating it all in one sitting! lol 🤪 The best marker for me is checking my blood sugar after eating and it doesn't rise at all from eating this soup. I eat the keto way for the most part to keep my A1C in check and manage my Type 2 Diabetes. With this WOE my A1C is 5.4 so .1 away from being normal. I make spicy cabbage soup I use cabbage, ground beef , green seasoning, haberno pepper, chicken brooth, and at the end the star ingredient coconut milk..

Of course check your labels people. There are good carbs and bad ones. None of the ingredients on here will raise your blood sugar , and if it does not much. If you are against using tomatoes, then try a Nomato sauce (you'd have to make it on your own but tons of recipes) and replace it with that. Take out the green beans, but the rest is fine. This DOES follow the keto diet. One thing I did learn from this is that I had no idea there was such a thing as garlic paste. LOL

I know a lot of people are assuming this is too many carbs but as I diabetic and eating this soup for 5 days, I can personally say it DID NOT raise my blood sugar one bit and furthermore, I was able to drop 7 lbs in 5 days! 😊👍 I like to offer inspiration and ideas but each person needs to find what works best for them and their bodies. Oh, and I'm so happy I could help with the garlic paste too! lol 😃
how long have u been doing keto for?
I've been on and off of keto since September of 2017. It has helped me to keep my blood sugar in check and my A1C is down to 5.7. I have times when I've gone off but I always feel so much better when eliminating the carbs & sugars. 😊😊👍
I eat low-carb to control myT2D.
This is way too high in carbs for me maybe double the meat and only put a little bit of tomatoes (1/2 Fresh Roma) because tomatoes generally have sugar and carbs. I’d like to see what you lost by the end of the week good luck.
Hi Sally, I do as well. I was just putting this recipe out there as an alternative for those who like a reboot. I am T2D and I ate this for 5 days, my blood sugar stayed in the normal range 80-90 and I lost 7 lbs. Good luck to you dear! 😊💕

So you must be doing total carbs then and not subtracting the fiber? This worked well for me, I lost 7 lbs in 5 days and this was all I ate until full! 😊👍 Good luck to you! 💗

I looked up the carb count for canned diced tomatoes using Carb Manager. There are about 13.5 grams net carbs in a cup. In this soup, it would depend on how much the serving was, but still be negligible. Also I notice that canned tomatoes are used in many keto or lowcarb recipes. Use less tomato if you think one can would be too much. The tomato just adds flavor in a soup, and isn't the main attraction.

wow way too much veg in that soup for keto...i would take out the cauliflower rice...the green beans..one of the cans of diced tomatoes..and i would reduce the sauteed veg by half.....i would double the cabbage...and not put the ground beef in..but serve it as a side dish....it would go lovely with a piece of grilled chicken a steak or a burger
