    Ingredients:
    For the Puri:
    🔸1 cup semolina (rava/sooji)
    🔸1 tbsp wheat flour
    🔸Salt to taste
    🔸Water, as needed
    🔸Oil, for deep frying
    For the Masala:
    🔹1 cup dried peas, soaked overnight
    🔹2 tsp Jeera
    🔹2 tsp Saunf
    🔹4 Cloves
    🔹2" Cinnamon
    🔹1 Bay Leaf
    🔹2 onions, finely chopped
    🔹2 tomatoes, finely chopped
    🔹2-3 green chilies, finely chopped
    🔹3 tbsp ginger-garlic, chopped
    🔹1 tsp turmeric powder
    🔹3 tsp red chili powder
    🔹1 tsp coriander Powder
    🔹1 tsp garam masala
    🔹Salt to taste
    🔹2-3 cups water
    🔹1 tbsp Oil
    For Garnishing:
    🔸1/2 cup finely chopped onions
    🔸1/2 cup finely chopped tomatoes (Optional)
    🔸1/2 cup finely chopped coriander leaves(Optional)
    🔸Sev (crunchy chickpea flour noodles)
    Instructions:
    Making the Puris:
    In a bowl, mix semolina, flour, and salt.
    Add water gradually to form a firm dough.
    Let it rest for 30 minutes while covering it with a wet cloth.
    Roll out the dough like chapati, then cut into thin circles using a cap or a cookie cutter.
    Cover it with a wet cloth to ensure it doesn't dry up.
    Heat oil in a deep frying pan.
    Fry the puris until they puff up and turn golden brown. Drain on paper towels and set aside.
    Preparing the Masala:
    Pressure cook the soaked peas with a pinch of salt until they are soft. Drain and set aside.
    Heat oil in a pan.
    Add whole spices mentioned above and Sauté for 2 minutes.
    Next, add chopped onions and sauté until brown.
    Then add ginger-garlic and green chilies.
    Sauté until raw smell goes and add chopped tomatoes
    Once it turns mushy, add turmeric powder, red chili powder, garam masala, coriander powder and salt.
    Cook until the oil starts to separate.
    Allow it cool and add a laddle of cooked peas to the masala mix.
    Grind it smooth using a mixer.
    Add it to the cooked peas
    Mix well, Add water to achieve a slightly thick gravy consistency and adjust the spices and salt to taste.
    Let it simmer for 10-15 minutes.
    Serve 🔥 Hot.
