I am Mexican my ex is Puerto Rican. So I’m familiar with these . I made tamales with my parents and sisters when we lived at home. We totally made them different than how Udell does. We purchased the husk dry and soaked them overnight to get them soft to spread the masa on the husk add your choice of meat or we also did raisin sweet tamales. Oh so yummy. I now buy tamales already made from a Chicago Mexican store and the are delicious as well. It’s a lot of work to make them
That grinder is bringing back memories. When I was a little girl my aunt had a grinder just like that and I used to help her grinding whatever she was cooking. I have not seen one since then and I’m 64 years old now. It gets the job done but, you just have to be careful that your fingers don’t get pinched in it. Your husband is a jack of all trades. Who would think that he would use this in making his recipe.

If you learn the basics then really it’s all about taste too. You should always taste your food that you’re cooking. That’ll tell you if you need less salt more salt. Do you want to start less of course gradually go up if needed.
