SUPER TENDER STEAK SANDWICH & FRIES ON FIRE - CAMP COOKING

Recipe:
7 min prep
20 min cook time
Makes 2 sandwiches
Ingredients:
1. 250-300g Scotch fillet
2. 2 fresh Turkish or sourdough rolls
3. 100g (4 slices) bacon
4. 4 slices of gouda or cheddar
5. 1 tomato
6. 1 handful of baby spinach
7. Salt & pepper
8. Dijon mustard
9. Caramelised onion relish (I used homemade but quality bought stuff is great)
Directions:
1. Pat your steak dry with paper towel and generously salt and pepper both sides (do this within 3 minutes of it hitting the heat).
2. Arrange your steak in the middle and bacon on the outside of your camp braai to give the steak maximum heat.
3. Sear the steak at the closest setting to the fire for approx. 2-3 min on each side (depending how hot your fire is) to achieve medium rare. Cook more or less depending on your preference).
4. Rest for 5 minutes then slice in to thin strips.
5. Line the strips on the bottom half of your rolls, then add cheese, bacon, sliced tomato, spinach.
6. Add your mustard and caramelised onion relish to the top of your roll.
7. Cook slowly on the top or middle setting of your Camp Braai (depending how hot your fire is) until the cheese is melted and the outside is browned. If you find the outside is blackening before the cheese melts, move it up a notch to slow the cooking down.
8. Cut in half and serve hot. - Jak na to + styl

Have the book and been slowly looking through the recipes. Cant wait to be able to go camping again and try a few. That steak wouldnt have lasted a second if i left it unattended with my dog around, the poor starving, under fed thing that she always is :). Well done to Fred for not eating everything, hopefully he did get a good feed.

Oh man, I can taste that from here. I often use red onion and grated red cabbage with red wine vinegar and mixed fruit jam and then Emantaler instead of cheddar.
I like to almost burn the butter in the onions and deglaze with beer. Yummm

I also really love the b-roll with that classical music at the end - what a superb touch...I feel it demonstrates the artistry of what you do and its so important to admire all your hard work and the end result before you eat it...and that's something very important which you do (and others don't) which better connects the viewers to your food - THANK YOU! Hey, a couple of quick questions if that's ok. (1) Do you feel it would be better to sear the steak on a cast iron grill - that way you get more hot surface area touching the steak and more crust from the mallard reaction? Only down side of this is that you lose the smokiness on the steak. (2) Do you feel it's a good thing to rub olive oil on the steak after patting it dry so that the salt and pepper stick to it more? Thanks again and can't way to see version 2 with the cheese and tomato's lol!
The fire was pretty hot that he needed to get the gloves. I reckon it will sear the steak. And good questions you ask as Harry has rubbed olive oil on his steaks in other videos. Can't wait for the second one later with the cheese. Harry may explain oiling the steak for the seasoning to stick.

I don't get why folks have such a hard time with steaks. Or why people think that they 'have the proper way' to cook them. Just cook them until you're happy with it. You don't have to be a pro or anything.
I make steak sandwiches for the family about 2-3 times a month. I cook the steak up on the gas grill. I used to coat them with BBQ sauce. But I now just put a seasoning called "Stan's Stuff" from Panama City, Florida (USA). Then add a little extra salt, pepper, and garlic powder. Then cook. My wife doesn't like them rare so I cook them just a little over medium, but still juicy.
In parallel, I fry up some onions, and tomatoes (that have a sprinkle of salt, pepper, and garlic powder) in butter and a little olive oil. Sometimes I'll do a jalepeno pepper as well.
The bread, I use a rustic or farmhouse white bread. I cover with butter and a light coating of garlic powder. Then toad with Muenster cheese on one side.
When putting together, I put a little mayo on it (and maybe a little dijon mustard if we have any). No greens. That's crazy!
Add some baked beans on the side. Maybe watermelon. Maybe corn on the cob (cooked on the grill, too). Maybe an artichoke. Heaven!
Hearing the visceral crunch of that sandwich was a sexual experience that I’ll never forget
