      I have had my Henkel knives for over 40 years and have never had the need to sharpen them. I don’t know what the “bar” is called that comes with them but that is all I’ve ever done to my knives. I have the flat and serrated dinner knives also. Wonderful products!!

    Wow she’s EXACTLY who I want to be, so knowledgeable and self sufficient! That’s my number 1 goal. I’m gonna do solar paneling, and use firewood for winter. I’m learning a lot from her as well as how much work it takes just to be as sufficient as her! (: I can’t wait until I can use the knowledge she gives to become exactly who I want to be!

    New subscriber here! Been binge watching for over a week. My grandmother raised and fed 4 kids on her own by growing food in her tiny balcony in the middle of South Philly. Im 22 and I came across one of your preservation videos and it has inspired me to become self sufficient and revive these skills my grandma taught me to cook for me and my husband from scratch. I made a bunch of pasta and started some basil plants on my tiny apartment window I love how relatable and practical your videos are!!!

      I do the same thing, I put a pot on the stool and my jar in the pot, just in case it overflows when I'm not looking! That way the tube is always open. The juice makes great jelly if you have people who prefer jelly to jam!

      That's what I do as well. I use a small table and a big pot and just let the juice flow right into it. Less chance of a messy overflow accident when I inevitability get distracted and leave it too long.

    I thought it'd be lots of fun to see what you're canning in this episode.
    This past week my husband and I canned 35 quarts of peach slices, about 35 pints of pears and 12 1/2 quarts of apple slices. (I bought all of the fruit at a local orchard in northern Utah where I live, which has an ideal climate for growing tree fruits and berries.) I also cut up some peaches into quarters and froze them for smoothies.
    We bought another 2 bushes of peaches yesterday. (It's now mid-September and the peach growing season ends the first week of October so I didn't want to lose out on the last of the peaches.)
    I'll be buying more apples for slices and sauce when the weather gets colder.
    I'll probably make grape juice in my steam juicer. Last year's grape juice was absolutely delicious because the grapes I bought were fully ripe.
    You can find free fruit in the classified ads. Homeowners are thrilled when their fruit isn't wasted and act like you're doing them a huge favor when you pick the fruit!

    I noticed you were cleaning the kale one at a time. Have you ever filled the sink with water and a dash of salt? Roots and refuge does that and said the bugs don’t like the salt water and fall off the food while soaking. I have tried this with my lettuce and it works! Just thought it would save you some time when you are processing so much at one time and it could be soaking while you are processing something else. 😊

    I can't tell you how much I appreciate your videos. I'm 63 and I'm clueless in a kitchen. All my life, I've never really cared to be in a kitchen but all of a sudden I want to learn everything about cooking and homesteading. Your videos are a God send. I have a long way to go but you're going to help me out a lot.
    You had mentioned in this video or another about comments that you talk fast. It's actually a relief to me that your videos don't feel like they drag out forever. You keep things moving at a great clip and you make sure that you give as many tips as possible so people can understand why things are done a certain way. I've watched people who are nervous doing videos and they talk so fast, they sound like they're ready to hyperventilate. It's stressful to get through those vids.
    You talk fast but you're actually a calming presence, and you are able to give a whole lot of information quickly. It's amazing!
    I have nothing but admiration and awe for the bulk work that you do, and the fact that you can keep track of so many projects at once. I just want to give my immense thanks for helping me learn.

    Another idea for your peppers is pepper jelly it tastes like a sweet chili sauce perfect for meat, marinades, even mix with cream cheese and spread on a cracker

    Video idea: an overview of all your preserving equipment plus your recs for the “essentials” that someone who is just getting into preserving would want to have. It seems like there’s a decent amount of specialty equipment which can be overwhelming to someone who is just getting started, so hearing how you started out and how you’ve added to your collection could be helpful. This could also be helpful for someone who doesn’t have a lot of space for a ton of equipment so might help them zone in on the basics.

    Becky, you are an inspiration to us women who love our small gardens and preserving our harvest. When I harvested my peppers I sometimes feel overwhelmed what to do with them all. Then a video notification comes up from you, so I watch it and just feel encouraged to get in my kitchen and tackle my harvest that needs to be canned or chopped to freeze. I can’t wait to get some apples to make apple sauce to can. I appreciate you getting this old woman motivated to get my stuff done. Thank you for sharing!

    It's so great to see someone your age working so hard at what my grandparents used to do just to survive the dirty 30's!!! You are doing something I wish I would have learned a long time ago to do!!! At age 60 years young, with some of my bad back issues, being on my feet as long as you have been doing this has become a chore in itself!!! Keep up the great work, baby sister!!! It's all really worth all your effort!!!

    Becky, just something I do when I’m canning. I wear dish washing gloves 🧤. They protect you from the heat long enough to do what you need to do and they also give a better grip. I love your videos! I wish I had your energy. I’m over twice your age I’m sure. I love to garden yet but I live alone so I don’t need as much. My old record for canning tomatoes was 240 quarts in one year. It was thick so it had to cook down a lot. That was the way my family liked it.

    Dang! You are a machine I'm exhausted just watching you.
    A worthy upgrade in the future should be an outdoor kitchen and grill 😉. Many countries and the United States in the past the kitchen is outside and all harvest processing is outside that way your house doesn't heat up, it's not too bad if things get a little messy, etc. Plus, you can have a nice grill for parties outside 😊

    Such a small thing, but thank you for acknowledging the mess -- juice dripping off the counter, soggy towels, backup bowls, etc. With so many projects, I feel like I must be messing something up when I have a massive mess and so many instructors seem to have minimal cleanup and waste that magically disappears off camera!

    I clean my peppers and leave them whole and freeze them, when I want stuffed peppers I stuff them frozen and then bake or braise them in tomato sauce! Delish😊

      So by cleaning them you mean you take out the seeds and leave a whole “shell” ready to be stuffed? Don’t they get squashed in the freezer or do you put them in a box?

      @@marcwright4790 actually no they don't I stack them one inside the other, I can get 4 in a gallon freezer bag, if you have the freezer space you can use a container and maybe freeze more stacked in the container. Someone told me this trick many years ago I love it! Hope you like it as much😊

It's amazing how many things she's invested in to allow her to do this each year...two giant roasters, that peel/core/slice thing, the canner, the pressure canner, the FoodSaver, two dehydrators, a freeze dryer, the really nice knives, extra wheel barrows... My god, she's a one woman food processor herself!

    Pear sauce was my kids favorite thing. I used brown sugar and cinnamon with a dash of nutmeg. It didn't matter how many jars I canned it was never enough. If one cup of coffee gives you that much energy I wonder what 2 cups would do!! Love your energy.

    Hi Becky, love the videos.
    Please use the spine of the knife when scraping your chopping boards as you chop food, etc. as using the blade edge causes damage. I was taught this tip by a chef I worked with when I got my good knives.
    On the note of sharpening knives, that reminds me, I must get mine done. Nothing worse than a blunt knife.

    You are so much fun! Way to go lady! Your garden has been so prolific! Also, you really don’t talk that quickly, you are just from the northwest, we don’t talk as slowly as the rest of the country does! 😉 you are a beautiful soul and I loved how you showed the good the bad and the ugly about canning. It’s not pretty all the time, the dishes are in piles, there are messes to clean up, laundry to do, and family time take care of.     This ole lady, is amazed with the amount of energy you have. I can't drink caffeinated coffee, so that's a bummer. I like making kale chips for snack with nutritional yeast on them, they are delicious. My hubby made me 2 of 3 waist high raised garden beds for me, they are 10' long by 2' wide, so I don't have to try to get down to pull weeds. We also salvaged 2 old shower pans from old campers to use for my garlic to grow in the winter and then plant my mater's in the spring. We repurpose alot of items. I melted down beeswax with mineral oil to paint on the insides of the garden beds and then laid down black weed block canvas, to preserve the wood and not use any chemicals. They are extremely sturdy and work great for me. He plans to make another one for me so they'll be in a U shape, as soon as wood prices come down, so next year I can increase my growing. I vacuum seal my colored peppers the same way you do. We turned our tiny extra bedroom into a walk-in canned pantry with floor to ceiling shelves. They can hold over 1000 jars and I have almost filled them up this last year. I never learned how to do any gardening or canning from my mom or grandma's, they never did any of that kind of things. So I have self taught myself.💜 & Blessings to you and your videos.

    I love, love, love this kind of video and I know there’s only a short season of this, but you inspire me! I have started canning this year for the 1st time from a garden of only 6 4x8 beds and I have about 70 jars as well as some dehydrated tomatoes for tomato powder, kale, mushrooms and herbs. So satisfying. Thanks for letting us enjoy your journey.

      Gosh I’m overwhelmed by only two 4x8 beds + 25 grow bags. I had a bunch of “volunteer” tomatoes along my fence line and they produced really lovely Roma-style tomatoes in abundance. I have bags and bags of tomatoes in my new deep freeze. Oh my it’s so fun!

    Just a tip I would suggest not stacking your wood against your house incase there are bugs that like to eat wood like carpenter ants, or termites ect.

    A tip on the steam juicer: we always put a barstool or something in front of it where we place the jar. So when we take out the juice, we don't have to hold the jar.

      I use a stool as well. And I have a loop of string tied to the lid. I put the tube with the clamp through the loop and it never flips out anymore

    I am 59 and live alone. I don’t have any availability to grow my own food … yet I love watching you. I adore your fortitude. Your spontaneity and critical thinking skills to try new things are so fun to watch and seeing you learn from mistakes and revel in your accomplishments somehow makes me proud. Lol I’m such a Mom.       You can grow some food indoors, and don’t forget about seed sprouts! A mason jar, a screen lid and in 4-7 days you have fresh sprouts. Way denser nutrient load than vegetables and super easy/affordable. :)

    Fit a mesh strainer over your measuring cup when scooping juice from things like those pears, it keeps the pieces out and let’s you fill the measuring cup faster.

    You are my people!!! Thank you for showing what real people are like. I do weekend projects in funky clothes, no shower, messy bun… with out people showing real, we all think we aren’t normal. I just pulled relish out of the canner at midnight on a Thursday (work night) because my next “free day” is Sunday and my garden harvest won’t be fresh anymore! Real women get s*** done ❤️💋

    My love language is acts of service so like you see the trash full take it out without asking so Josh getting your knives sharpened while you were on a girl's trip was super super awesome.
    My granddaughter had a hard time with pooing when she was probably 6-8 months old. The dr told us to give her 100% pear juice. Only one sippy cup a day and it kept her regular and she loved the taste.

    Love this video and how real you keep it! Also I put a stool under my steam juicer along with a half gallon jar to fill and then I just transfer the juice to the quart or I can it in half gallons. Works great.

    The leftover mush from juicing the pears/ apples make an amazing apple sauce by the way. Run it trough a good mill (hand cranked), let it caramelise into the bottom and add sugar and cinnamon. 🤤

    I live in a small apartment in Japan, I don’t even cook that much. But I love watching you, Becky. It feels like I’m hanging out with a good friend. I kind of miss the time friends and family would gather to make pizza and potstickers. After the virus, my anxiety went nuts and I haven’t been able to meet with people just for the pleasure of meeting people.

I live just outside of Phoenix so gardening here is a bit challenging when it gets so hot for months on end. Your energy is inspiring

    Becky, the peppers in the food saver come out beautifully. I never have freezer crystals on mine since I started freezing mine this way. I also use mine for chili and quiches and other things. You will be very happy with the using the food saver this time.

    Henckels are a wonderful brand of knives. I have one of their huge chef's knives and a pair if their red handled kitchen shears. The knife I have is a "one man", meaning that the.logo shows one person. The shears are two man, showing 2 people in the logo which is their absolute top of the line products. Take care of them and they should last generations.

      The logo with two persons on it is the original German brand called "Zwilling" which means "twin". There must be somebody German near this household. I noticed she keeps her quinoa in a standard German canning jar.

      I went with Victorinox Fibrox Pro Chef's Knives. I found that Henckels need to be sharpened sooner and wear down too fast. The Victorinox is shockingly cheaper yet rated far higher by people outside of Amazon comments. Also please tell everyone that dull knives are dangerous -- emergency room personnel says that dull knives account for far more injuries than sharp ones. I, too, go with a service having failed to get good results with blocks, rods, and machines. One place I lived had a guy who parked at farmers' markets and sharpened while we shopped.

      @@susanjane4784 I have heard that Victorianox keep their edge longer. Luckily my husband can sharpen our knives at home so every few weeks he goes through the blocks and does it. We also have a full block of Case kitchen knives that he has collected, including steak knives that are nonserrated and have a vintage style handle. I'm allowed to use his case knives but...most people who help out in the kitchen have to use the Henckels. He is so possessive of them

    Tip for the pear juice, if you place a stool next to the stove, you can lean/place the jar on it to prevent it from slipping through your fingers. Also, you can get better grip on a jar with a gardening glove that has the rubber dipped fingers/palm. I am amazed as to how much you had accomplished in 2 days!! :D

    When I use my steam juicer, I put a sturdy towel-covered TV tray in front of my stove to rest the jar on while filling it.That way I can concentrate on safely directing the flow of the juice and stopping it before overflow stage and prevent burns! The clip end of the hose can be used to pinch off the flow of juice as well as clipping it to hose the handle.

    Such a great video! Just a suggestion! For using the steam juicer, I take a bar stool and place a towel on it. Put your hot jars on that and then fill the jars with juice. This will save spilling, holding etc. Then you can put your lid on and then move it wherever. I have had mine for about 18 years and it is still going strong. I love it!!

    I canned pears last weekend and made jelly from the peals. It was okay. I got the idea after I found out you can make syrup and jelly from peach skins and pits. I made syrup with my peach skins and ohhhhh mah gawsh! Is it amazing. Made plain cheesecake and put the peach syrup over the top…to die for!!

    I have had my Henckel knives for 40 years. They were expensive then but I still love them. I sharpen them myself.

An I have a ton of peppers that are beginning to ripen.
