  • COCOA BUNS - Outback Steakhouse Copycat Honey Wheat Bread
    Ingredients:
    ▪ 1 1/2 cups warm water (105’F)
    ▪ 1 tablespoon sugar
    ▪ 2 1/4 teaspoon instant dry yeast
    ▪ 2 cups bread flour
    ▪ 1 3/4 cups whole wheat flour
    ▪ 2 tablespoon cocoa powder
    ▪ 2 teaspoon instant coffee
    ▪ 1 teaspoon salt
    ▪ 2 tablespoon butter, softened
    ▪ 1/4 cup honey
    ▪ 3 tablespoon brown sugar
    ▪ dark brown food coloring (optional)
    Instructions:
    1. Mix together the warm water, sugar, and yeast. Set aside for 5 minutes to proof (until it looks bubbly).
    2. In your stand mixer, mix together all ingredients. Then knead on medium speed for 8 to 10 minutes. Dough is thicker than a standard white bread, it will be a little tacky.
    3. Place dough in a large bowl coated with oil. Make sure to turn the dough in the bowl so all sides are coated with oil, so dough do not get hard.
    4. Cover and place in a warm, draft free area. Let dough rise until it is double in size, about 1 hr.
    5. Once dough is doubled, punch the dough and let it rest for 2 min. Divide dough into 16 pieces. Roll dough and cover with towel and let rise until double in size again.
    6. Lightly wet top of rolls and sprinkle on oats (optional).
    7. Bake at 350 degrees for about 20 to 25 minutes.
    8. When done baking brush top of bread with butter.

    I tried these and the flavor was great, but the middles of my rolls were soft and doughy no matter how long I cooked them. Can anyone tell me what I did wrong?

      There's a couple of possible reasons why your bread is doughy in the middle... Are you kneading enough or too much...are you also letting it rise enough..and also oven temp is reading correct because oven is old?....

      How can you even tell what this jojo person was trying to say? Even with my handy "Autistic-to-English" translation app, it still made no sense. Kids with learning disabilities have better grammar than that mess. The ALL-CAPS was a nice touch though. (yet, the last couple words weren't. So weird!)
