St Vincent/Caribbean Coconut Drops/Rock Cake

Recipe
2 cups of sifted self rising flour- If you prefer to used all-purpose flour use 2 teaspoons of baking powder and 1/4 teaspoon salt.
1/2 cup of unsalted butter
1 cup of fresh grated coconut
1/2 cup of sugar
1 teaspoon cinnamon powder
1/2 teaspoon grated nutmeg- 1/4 or a pinch if you prefer
1 teaspoon vanilla extract
1/2 cup raisins
About 4-5 tablespoons of coconut milk
Mix well and bake at 350 degrees for 25-30 minutes
As you know coconut has lots of moisture and tends to dry out bread products. Store in fridge and reheat.

I will recommend you use all purpose flour, if you try. That is the better flour!☺️
