This weeks beer tasting is a very nice Black Lager from John's cellar.
Brewing in February, this lager is a combination of Pilsner, Munich and Carafa Special II. John fermented this beer with WLP838 Southern German Lager Yeast.
This beer comes out with delicate notes of coffee and chocolate roast. The flavor is a very crisp and clean lager balanced with those same subtle roast notes. A well balanced lager that maintains its interest with the specialty malts, but is highly drinkable as a clean lager. Cheers.
RECIPE:
9 pounds Pilsner Malt
1 pound Munich 10° L
11 oz Carafa Special II 430° L
1.5 oz of Mt. Hood hops - 60 mins.
1 oz of Cascade hops - 20 mins.
Used distilled water.
4 gms gypsum in Mash
5 gms gypsum in Sparge
3 gms gypsum added at start of the boil.
Mashed at 150° F.
Fermented for 3 weeks at 50 ° F
Lagered in secondary for 6 weeks at 34° F
May the schwartz be with you! Brew on...
"Your schwartz is as big as mine."
Cascade hops in a Schwarzbier, interesting. I plan on doing a Schwarzbier shortly, I'm going to use Wyeast German Ale, I have also heard people have had good results with kolsch yeast in a schwarz. I really enjoy Kostrizer's Schwarzbier, if I could get something close to that without the pain of lagering I will be very happy!
My Cascade hops were home grown and I only had an ounce of them. They weren't that powerful...I'd stick with noble-y hops typically for a Schwarzbier. - John
Great content. Keep it up!
Thanks - we're just getting going. - John
Really love that Sth German lager yeast eh boys!
Yeah, that's a good strain.
I think we just transitioned from early spring to Florida summer. I'm tapping a Belgian Wit this afternoon. Cheers!
It has finally arrived.
It's going to be 90 in New Jersey today! Bring some of that dark fuzzy bier down here. Lol
We'll be right there.
I have some challenges for using home grown hopes. Could you make a video about how to process and use home grown hopes?

Thank you very much. It is very helpful info. Cheers!
i like lager, and i like stout. why would i brew a Schwarzbier? is it kinda like having a smart phone and a laptop and buying a tablet?
Sometimes we brew stuff to see what its like. Can't always get good Schwarzbier in the store so its homebrewing to the rescue. Cheers! -Mike
How close is this to the fat tire 1554 black lager or do you have a clone for that
Not sure - I don't have a clone for that beer. - John
RIP mike's beard
It'll grow back. It's like Baby Groot right now.
