When filling jars with something thick like your mustard, try putting it in a piping bag without a tip. Pipe into the jars starting in that bottom corner. It will eliminate the bubbles around the bottom edge.

All looks good! By the way, you can use the left over "boiled onions & garlic" as flavoring for cream cheese stuffed mushrooms. I do it whenever I make Dijon. If you cannot do it the same day, just freeze and then thaw, mince, mix with cream cheese, stuff the mushrooms and bake as you would any other stuffed mushrooms. I do these as finger food hors d'oeuvres for game days or such. People just love them! That way nothing is wasted.
It's nice to see Josh becoming more comfortable in front of the camera as time goes on. He's a wonderful addition to your content! Your energy together is really nice to see 🙂

you are my inspiration Becky. i'm a former pastry chef, always cook, and avid gardener. we have multiple raised beds in our yard where we grow beans,tomatoes,strawberries, currants, raspberries, hungarian peppers, butternut and haifa squashes, chives cucumbers and ZINNIAS GALORE! . in winter under growlights, herbs, lettuces, organic sprouts of all kinds etc. were i your age again, my husband and i agree we would have done all we could to have a homestead like yours. thank you for all your work, humour, joy of life, and sharing!

You can grow almost anything in pots if you're limited on space. Herbs, tomatoes, peppers, potatoes, carrots, berries, viney fruits or veggies just add some sort of trellis for the viney ones.

Those sandwiches look yummy. Having a chopped sandwich would be a nice change up. I had to laugh when you were cutting the small tomatoes. My grandpa HATED cherry tomatoes. He said they were too much juice and seeds and his voice popped into my head when I saw that. Thank you for such a sweet memory-he’s been gone for 30 years.

You can freeze dry your onions. Then put them in blender. So good.

We are a huge onion household and this is perfect! I can only dehydrate so many and making powders and minced uses more than I would like. I wanted to grow many this year and this is perfect timing! OMG, I have been eating the chopped sandwich fixins every way possible. I have made several variations and they have all been fantastic. It's great with tuna salad, chicken salad, eggs, mediterranean ingredients, itialian, chef salad. SOOOOO GOOD. They are all good on cottage cheese if you want more protein and less carbs. So great on bagels. Add over just chopped lettuce to make it a salad. The possibilities are endless. You will find yourself getting super creative. And the more fine you chop it, the better it is, I swear. Enjoy!!

I'm so glad you did the onions! I am about to do the same thing and it is so nice seeing someone else do it first. I also got a bunch of garlic because I thought it would be tasty to have a clove in each jar. I love pickled veggies too. Every once in a while I crave them and do up a batch of mixed veggies: cauliflower, green beans, carrots, and onions all in a single jar with a sweet/hot brine. I probably don't need to worry about canning them because they don't last very long (as in they get eaten right away). I gave one big jar to a friend and she ate the whole jar in the car on the way home!
Another suggestion would be for you to use leftover brine for pickled eggs with all that oniony garlicy taste yum.

We really enjoy red onions canned in a balsamic honey brine with bay leaf and mustard seeds. You don't heat the onions in advance and simply pour the brine over the onions and process for 15 minutes. You do however need to let the onions marinate for two weeks after processing for them to become perfectly delicous.
I love this as my red onions are getting huge bulbs now and I planted to many. This will be a definite addition to my pantry. Thank you!😍

I love the fact that you do unusual recipes. I will definitely try the pickled onion . I like the extra ingredients you added. And keeping the onion vinegar so smart.
We can order grinders at our deli on a salad. Thats exactly what they do is dice up all the deli items and spread them over the top of the salad. I think these would be awesome to take the deli base and the cond and broil it to get that yummy cheese hot and melted. Then id place the lettuce and tomato on top as usual.

I use the onion peels. They give a nice rich colour to the vegetable broth I cook from peels. Parts rotten, soft or foul go to the compost, but all good peels may be added to get a supertasty vegetable broth. Make sure there is no earth left on the peels. Just simmer an hour with salt and water and a tablespoon oil in a big pot, put it through a sieve, and use for soups. If you put it through a fine sieve it is possible to pasteurize the clear broth. You may collect all kinds of peels and greens by freezing for this purpose.

I've seen on other channels that you can use a bay leaf or grape leaf instead of pickle crisp, it's the tannins that keep them crispy. Maybe try that next time and see if it changes the end product to where you like them more❤

The sandwiches they chop in nyc are chopped until its like tuna consistency (less messy) and they chop everything together. They also add anything you want in the whole deli so many people add chips like hot doritos or something. :)

PLEASEEEEEEEEE make another video showing your garden/What you grow/ Why you grow it and the difficulty of that particular veg/fruit/legume/etc
In the UK we use pickling onions, which look like round shallots. You peel, cover in dry salt, leave 24 hours, rinse off, dry, pack in jars, cover in cold pickling vinegar (or make your own by boiling pickling spice wiith malt vinegar and leave 24 hours to infuse). Let mature for about 6 months and you are hood to go. No boiling the jars and they stay crunchy. Even commercially, there's no hest process step. Same with jam, chutney etc. You just hot fill the jar and stick the lid on.
