Right. Kimchi by default contains fish sauce and garlic (among other things). But Buddhist monks make kimchi without these because of their dietary restriction though.
I generally don't like strong garlic flavors but somehow I don't notice it as much in kimchi even when I know it contains it. I don't know why though.
carmen rosewood My grandma uses minced garlic in her kimchi. Most people do, actually. It enhances the flavors in the background, so if you did taste garlic in kimchi, it means it was made wrong. :)

I totally cheat and use a kimchi base, there's a really good one I found (has to have fish prominent in the ingredients) but it's like 6 bucks a bottle, I think I'm going to try to make if from scratch next time. kimchi Persian cucumbers are the best

I buy kimchi from a hole in the wall authentic Korean restaurant. It's made fresh and I have to wait an hour for it. The owner who makes it is exactly like this mom. Very friendly, down to business and just does not play around.
