- How to cook PINAKBET with PORK BELLY
This is how we cook it in my hometown in Magallanes, Cavite
Pinakbet : Mixed vegetable dish from the Philippines. It is usually served along with fried Fish as the main dish. Pinakbet can contain pork, or shrimp if desired. In this recipe we added fried crispy pork. Pinakbet has different variations across the provinces in the Philippines.
Ingredients:
Crispy Pork Belly (Shrimp is Optional)
Ginger
Onion
Tomatoes
Garlic
Squash
Ampalaya
Eggplant
Okra
String Beans

Para nka halfcook na Ang mga gulay
Hindi naman po, masarap din kasi kapag may texture/crisp ang mga gulay at hindi lamog. At ang mga nabibili na kalabasa dito sa California ay creamy, mabilis lumambot.

saute ginger po dahil ang mantika ay galing sa pinagprituhan ng pork belly para mabalance and flavor ng oil to the pinakbet.

Lutong tinamad pinagsabay lahat ng gulay 😂 tapos may kamatis na pinakbet?
Kapag ang gulay ay naluluto ng sabay sabay kelangan sabay sabay din ilalagay. Otherwise lamog na yung isang gulay hindi mo pa nailalagay yung dapat kasabay nyang naluluto.
By the way, napakasarap nyan kahit sa tingin mo lutong tamad.
Kamatis? High in Beta Carotene. Depende sa pinakbet kung may kamatis. Pwede mo naman hindi lagyan ng kamatis kung di ka mahilig sa kamatis.

Not the Ilocano way. And I never claimed it is the Ilocano way. Philippines have different regions and I am from the Southern Luzon Region. I cook pinakbet the way Cavitenos liked it. Feel free to share your recipe.
