BEEF SHORT RIBS | CAJUN BANDIT ROTISSERIE | HOT AND FAST BEEF RIBS | WEBER SMOKY MOUNTAIN

  • I cooked some beef short ribs on the WSM 22.5 using the Cajun Bandit expansion ring and rotisserie. A charcoal grate was placed up in the middle of the cooker and 2 kidney shaped charcoal pans normally used on kettles were used on each side inside the cooker. This made for plenty of heat for the cook. I didn't intend on cooking this hot but to stay down around the 250 mark, but after loading the chimney of charcoal into the two pans, the temps went up to 357 degrees. After putting the spit rod with the beef ribs on, I closed one of the three bottom vents, cracked the second vent, and left the third vend open about a pencil width. I didn't intentionally mean for this to be a hot and fast cook, but that's what I ended up with. The temp was 340-320 for the first hour, 300-280 the second hour, then finally came down to 250 in the 3rd hour. The beef ribs interal temp checked in at 194 & 192 after 2.5 hours. I removed the meat and double wrapped in foil and let rest for 3 hours in which they finished tenderizing nicely. Surprisingly, with this short hot and fast cook, they turned out very tender and juicy and I was very pleased. I used a modified basket to put the two sections of beef ribs in and ran the spit rod thru it. This will be my goto process for future cooks if using the rotisserie.

      Haha. that was a true story. There is violence in the streets so be careful. The beef ribs were fantastic. I can only find them at our butcher shop. These had some great marbling all over which renders down into the meat and makes for slap yo mama flavor. See ya and have a great week. Hey to sis.

      They were fabulous I must say. You can see the marbling on the opening. All that marbled fat rendering into the meat (at a high temp) made it wonderful. Getchasome ! Thanks bud

      Hey there James. I lucked up on this one. Didn't actually mean for them to cook that hot, but some comp pitmasters are getting into that recently, hot and fast brisket and such. I seemed to work on these beef ribs. HMB says having heavy fat marbling may have contributed to them turning out so juicy at high temps. Who knows for sure. I will eventually try it again and we shall see. Janet got some recognition today. lol Have a great week- Phil

      May depend on what day of the week it is or supply. They seem very helpful and will answer any questions you have. If you like sausage, try their fresh made. It is great. I get 4 lbs at time and make up patties, vacuum seal them and freeze. Then take out one at time for breakfast. Thanks and have a great week

      Only place I find them is the Butcher shop. These were the best I've gotten there. They were marbled up very nice which makes for some fantastic flavor after it renders down into the meat. Good luck on finding some. Thanks-Phil

    Phil, where do I start? Wow. These ribs look awesome. Short ribs is one thing I still have not done. I gotta' fix that!! I prefer hot and fast smoking. I do it almost exclusively. Love it. And it's hilarious that someone thought your wife's name was Florence ;)
    Just yesterday I picked up a set of those Weber charcoal baskets so I could try to do a poor man's slow n' sear ribeye this coming week as I practice for my first SCA steak contest. We'll see how that goes. Lastly, I love your intro video. Did you make that yourself, or have it made? Take care, brother.

      I need the same upgrades! I'm not sure if it's the free software or my PC, but I regularly have slow downs and freezes when I'm making vids now. Do you save all your old video files or delete them? I'm quickly filling up my hard drive. Can't decide if I want to save the original files or not.
      Great tip on the beef ribs. I'll look closely again at yours and try to find some juicy ones. One of these days I need to get me a Lobel's gift certificate for Christmas :)

    I like beef short ribs but round here it's hard to fine some with enough meat on the bone. We're in kind of a rural area and no butcher within many miles. Except the local grocer butcher that doesn't carry beef ribs (except the pre-package ones). Oh well, least I get to see some good beef ribs. Lookin' good Phil.

    Hey Phil! That was a funny story on how people think Janet is Florence. LLLLL. Wow!.....what a great cut of beef! You said it in the vid.....the marbling was tremendous!
    That's what probably made this hot and fast a success. If I could offer some advice?........You were shutting all the vents down to try and get a handle on the rising temps.
    But........Do You See all the extra holes drilled in the C.B. Rot. Ring??? Hmmmmmm????? :-) Awesome meal with all the sides that Florence made. Smoke On My Friend!

      You've got an eye for details and great feedback. Yes the marbling prolly kept them juicy, and the CB ring holes prolly fed the flame. Makes sense. However, I do like the fast cook. Wonder if I could repeat it if I wanted. Next ribs may not be all marbled up and end up dry under same process. who knows. I will do it again though. Might get a couple flat magnets off the fridg and put over the holes. LOL I'll tell Florence hello. Thanks Ken

    Ribs looked great. I happen to what another video using the weber baskets. With that said in video I seen they used minion method in one basket to maintain 225 degrees. That was on a kettle.
