I had to make mine 3 times to get it jiggly, fluffy and delicious! Keep on working. Also make sure your egg whites are really whipped properly and you can try put vanilla extract in the cream cheese mixture when it's still in the pot.

you didn't make it right then. most likely you got egg yolk in your whites
