SUMAN MARUECOS BULAKENYA STYLE

  • Suman Maruecos Bulakenya-style is smoother version of suman made from glutinous rice and rice flour, cooked in coconut milk, sugar, sweet macapuno and flavored with ube extract. It also filled with latik that makes this suman special.
    INGREDIENTS:
    Yields: 20 suman
    - 20 sheets banana leaves
    - 1 can ( 400ml ) or 2 cups coconut cream ( kakang-gata ), for making latik
    - 3 cups coconut milk
    - 1 cup condensed milk
    - 1/4 cup sugar
    - 2 cups glutinous rice flour
    - 1 cup rice flour
    - 1 tablespoons ube extract
    - 1 teaspoon purple food coloring
    - 5 tablespoons sweet macapuno
    - coconut oil ( for greasing )

      Wow!! I grew up in San NIcholas, Hagonoy Bulacan. Went to St Anne Catholic School in the bayan. I have not heard anyone mention the town of Hagonoy, Bulacan. LOL!!

      Syang tunay po, sa atin po sa Bulacan matitikman ang mga masasarap na kakanin. Kaya nga po akoy nahilig din sa pagluluto ng mga kakanin.

      OMG!! I grew up as a little girl in San NIcolas, Hagonoy Bulacan before we migrated to SF in 1970. I like the Bulacan sweets and kakanin in Bulacan. I miss visiting my cousins in San Nicolas.

    Hi Mommy choco.. im new to your channel and love the recipes you are sharing. Thank you. My Tatay was from San Miguel Bulacan and I make sure evertime i visit Philippines i go to San Miguel because of the the masasarap n delicacies. The best ang Bulacan sa mga kakanin. But I never tried sabalangko at suman maruecos. For sure I will make these. Looks so delicious. What I miss tho is the Bulacan espasol na gawa raw sa gatas ng kalabaw. Sana I feature mo espasol n hiniwa hiwa ng square n maliliit. Salamat.

      Thank you so much Tess. I' am glad you find my channel interesting. True, Bulacan produce some of the best kakanin in the country. I have always loved native delicacies since i was young. That's why i want to share some of kakanin recipe that my mom used to cooked when we were growing up. I think its pastillas you mean to say that made from gatas ng kalabaw. Kasi yung espasol is made from glutinous rice flour and coconut milk.

    What’s another substitute for banana leaves? Can’t find that anywhere

      You can use parchment paper if you can't find banana leaves but make sure to brush the surface with coconut oil to prevent the mixture from sticking.

      Macapuno is a type of coconut with soft and chewy flesh that are preserved in sweet syrup. I used bottled sweetened macapuno in this that i bought in Asian-Filipino store.

      No, you can't! Coconut is one important ingredients needed in making suman and other Filipino kakanin.
