What size are you making the wood pieces that you are bonding to the body?

Widths depends on the body size. This body had a huge top flange so the wood was around 1 1/2” but usually they are around 1”-1 1/4” thick and usually around 2 3/4” tall .

Is construction adhesive ok to use instead of body filler?

No, I do not recommend it. Construction adhesive dries at different rates and will warp the outer body. If you find one that is polyester based and uses a catalyst that might work.
