Usually, when a stylist does this much cutting after the blow dry..it's to cover mistakes! I saw the mistake she made when she started cutting the sides and blending behind the ear. If she would have chosen the correct guide in the first place she wouldn't have to spend so much time chopping and thinning.
I'm not sure if you're a stylist but the technique she uses after the blow dry is texturizing. The client has a massive amount of hair & this technique gives it more movement & will make it easier for the client to style. Some stylists like to do structured cuts then break then up after based on the client hair patterns and density.
