I will be sharing three different fillings: one with spinach that I make without cooking, everything raw, easy, healthy and delicious. The minced meat filling is a from a hit well-known borek in Turkiye "sarıyer böreği" It has a special ingredient in the filling and way of making that makes it rich in taste. Finally I'll be making everyones favorite cheese börek with extra crunchy layers.
I am using only ready phyllo / filo pastry sheets "yufka" to make them.

For CHEESE BOREK:
about 250 gr. Turkish white cheese, or feta or mix of white cheese and a bit of aged cheese type (experiment with your favorite ones)
600gr. thick yufka / filo /phyllo sheets (use more layers if you have thinner filo)
for the sauce:
100gr. butter (melted)
1/2 cup vegetable oil or mix of vegetable and olive oil or use only olive oil if you prefer it
1/2 cup water
2 tbsp vinegar
2 tbsp flour
Spinach & Potato Filled Borek With Classic Borek Sauce:
750gr. spinach
1 big potato (optional)
1 onion
1 tsp each salt, black pepper, pul biber (chili flakes) (in the video I used 1 kg. spinach so added more spices but I had leftover filling that I freezed to use later)
600gr. thick yufka / filo /phyllo sheets (use more layers if you have thinner filo)
for the sauce:
2 eggs
1/2 cup olive oil or mix of olive and vegetable oil
1/2 cup yogurt or milk
egg for the egg wash
Sarıyer Borek
25 thin filo sheets (ones we use for making baklava)
400gr. minced meat
2 big onions
2-3 tbsp butter
2-3 tbsp olive oil
salt, pepper to taste
1 tsp sugar
1/4 to 1/3 cup currant
2-3 tbsp pine nuts (optional)
for the sauce
125gr. butter
1/3 cup vegetable oil
1/2 milk

yaklaşık 250 gr. beyaz peyniri veya beyaz peynir ve biraz olgunlaştırmış peynir (favorilerinizle deneme yapın)
5-6 adet 600 gr. yufka /ç
sosu için:

2 yemek kaşığı sirke
2 yemek kaşığı un
Klasik Börek Soslu Ispanaklı Patates Dolgulu Börek:
750 gr. ıspanak
1 büyük patates (isteğe bağlı)
1 soğan
1'er tatlı kaşığı tuz, karabiber, pul biber (videoda 1 kg. ıspanak kullandım o yüzden daha fazla baharat ekledim, kalan harcı dondurdum.
5-6 adet 600gr yufka
sosu için:
2 yumurta
1/2 su bardağı zeytinyağı veya zeytinyağı sıvıyağ karışımı
1/2 bardak yoğurt veya süt
üzerine bir yumurta
Sarıyer Böreği
25 adet baklavalık yufka ç
400 gr. kıyma
2 büyük soğan
2-3 yemek kaşığı tereyağı
2-3 yemek kaşığı zeytinyağı
tatmak için tuz, karabiber
1 çay kaşığı şeker
1/4 ila 1/3 bardak kuş üzümü
2-3 yemek kaşığı çam fıstığı (isteğe bağlı)
sosu için
125 gr. tereyağı
1/3 su bardağı sıvı yağ
1/2 süt

It is our Catholic way of 40 days of fasting, praying more and giving more to charity preparing for the Great Feast of Easter. (The Resurrection of Christ). All of them seem very yummy. Another idea for the mince meat filling: together with the currants you can also add some green olives chopped and a couple of hard boiled eggs also chopped. They are delicious! This is how they make "empanadas" (boreks in Spanish) in Argentina, though they usually make them with puff pastry and add a little tomato paste to the meat.

We have it widely available in Turkiye in markets. Where do you live? How is it in your country?
@@TFT Any particular brand that you can mention will be helpful . Most of the olive oil where we live in the US comes from Italy and I dont even think they are Real Olive oils. So when I saw the green olive oil in the bottle I was inquisitive to know from where it is. so We tend to use Sesame oils a product from Japan .
