    The milk is sent to centrifuge to separate the cream from the milk after it has been pasteurized and homeginezed. Isn't better to separate cream before pasteurization and homeginazation? Any one care to reply.

      They walk you through the basic process on the tour, but they don't get into the technical specifics. If you're interested in really learning the process, the university offers the Ice Cream Short Course once a year. Here's a video about it. czcams.com/video/TnyLyu36R4E/video.html
