Jordan is shamed by their father and ex gf to stay in their male form because they don't want Jordan to change genders. In this scene Jordan isn't sure if Marie likes them in their female form so they shift like they did with their ex gf.
I think they both will have a conversation about this in season 2 and Jordan will find out that Marie likes them both ways. It's a good show , I highly recommend

It kinda meant more to me that Marie saw more in them than her male attraction. Her preference being Jordan stood strong in contrast with Jordan's previous partner that was male attracted and only somewhat tolerated the fem form.
