First story, NTA. Just because she knew you had money doesn't you are obligated to cover her and her friends. Especially when they came uninvited. You asked her out, not her and her friends.
In every jurisdiction I'm familiar with, an engagement ring is to be returned if the engagement is called off. They are constantly conditional gifts, so if no wedding happens the ring needs to be returned. If she's not going to return it take her to small claims court.

Story 1: Why would you remotely think you're a jerk here?? The Karen is 100% the jerk here. I hate people that try and pull these on supposed "dates". They 100% just try and use people for free food and drinks.... and that is exactly what happened here. There is no way the OP should have to pay for them in any way. The fact that she knew you had money proves that the OP was used here. OP should've called them out and then block them. Story 2: The moment the OP moves out and moves with other family, she really needs to go zero contact with him. He sounds absolutely awful and he is totally using the OP and the sister too. This guy sounds absolutely terrible and deserves to be alone and miserable. Story 3: No way is the OP a jerk and the OP doesnt owe them an apology of any sort. If anyone should apologize, its the dad here for not being a better father to the OP at any points in his life. Also, screw the new wife and the step-siblings. I hate it when other people just come into the picture like that and just expect to be treated like a happy family when they have done absolutely nothing to earn or deserve it. The wife has no reason to be offended and the step-siblings dont deserve an apology for anything. Story 4: Wow, what's 10 whole minutes here, lady? I will respectfully disagree with Story 3. I get it was in poor taste for the dad to date a woman, marry her, move her and all of her kids into the house and then call the strangers your family - all without you knowing them or your consent.. But c'mon....you didn't even give them a chance. You hated them for simply coming into your life. Why not try to get to know them and THEN make your decision? But you automatically was like "I wanna move in with my grandma!". Look, I get it. Having a person just come into your life and assume authority BURNS!!!! I say that as someone who has had that happen. But there are better ways to handle it.
