Prosciutto wrapped stuffed pork tenderloin

  • Butterflied pork tenderloin, stuffed with sauteed onions, spinach, garlic and provolone cheese then rolled up and wrapped with prosciutto. Cooked on a Weber kettle for 50 minutes at 350 F.

      Thank you. I’m a little surprised as well. I just cooked this for an anything goes turn in at a KCBS competition over the weekend and got an 8th place call with it!

      Thanks! It could actually use a good deep cleaning. I polished and waxed the SS parts two summers ago but it’s time for another treatment.

    Looks great. I have stuffed a lot of things, but never a pork tenderloin. I think that will be on the menu for new years now. Thanks for the tip
    I went to our local diy today and almost dragged home this tool box with buil in wheels. It was like 4 feet high and divided into 2 quarters and 1 half ”shelves”. Really neat. Only thing not neat was the price my wife argued.. next time... :) i did get a lidded box that fits under my outdoors prepping table though so it was not a wasted trip hehe

      You won’t be disappointed if you cook this for New Years. I did three of them last night for dinner while out of town. I used the oven and then cane out great. You can prep these ahead of time. I prepped them yesterday before going golfing then popped them in the oven when I got for 50-55 minutes at 350.
      I guess I got lucky that my toolbox meant clearing out a cabinet or two in our small house so I didn’t get any pushback from my lady.
