Chilli oil noodles 🍜

- Ingredients
- 280g flour
- 160g warm water
- A pinch salt
- 3 tbsp veg oil
- 2 cloves garlic, minced
- 2 spring onions finely sliced
- 1 tsp chilli flakes
- 0.5 tsp cumin seeds
- 0.5 tsp Szechuan peppercorns
Method
1. Start by making the dough. In a mixing bowl place the flour and salt. Make a well in the centre and pour in the water.
2. Mix until it comes together and you have a shaggy dough. Then turn it out and knead for 6-7 minutes or until you have a smooth dough.
3. Cut into 4 pieces and roll into rounds.
4. Pour 0.5 tsp of oil into a bowl and place the dough ball into it, cover and let rest for 1 hour.
5. When ready, place a large pot of salted water on to boil, and the remainder of the oil in a small pot to heat.
6. Working with one dough ball at a time, flatten it out then make a divot in the centre with a chopstick. Then grab each end and pull to stretch it. Once you have pulled it to around 1 metre, tear the strip in half.
7. Place the pulled noodles into the boiling water and cook for 3-4 minutes.
8. Place the garlic, spring onions, chilli, cumin and Szechuan peppercorns into your bowl.
9. Carefully pour the hot oil over the spices and veg in the bowl before adding in the cooked and drained noodles. Give them a mix and you are good to eat. - Jak na to + styl

Noodles is not the difficult part of Ramen. As Uncle Roger used to say, authentic Ramen broth takes 15-24 hours to make.

I've made traditional ramen twice it takes a whole day. Instant ramen is the easiest or use chicken stock and buy thin cut seasoned meat.

Tip from a chinese dude for everyone:
premake your chili oil so that it has extra flavor. For spices, use star anise, cinnamon, Sichuan, garlic, and regular chili, optional are also fennel and cloves ( love to add them but not everyone is a big fan of fennel or cloves, some cant stand it.)
toast all the spices in a pan first in order to get the oils extracted and some more complex flavors going, make sure not to burn them though, you just want to lightly toast everything. Next add your oil, i prefer avocado oil, make sure not to bring the temps too high or the avocado oil will change from unsaturated fats ( the healthiest kind) into trans fats (the worst kind). Heat everything up until you start getting a nice spicy aroma wafting up off of the stove and the garlic looks crunchy. let it cool, pour it all into a large glass container. It stays good for a long time so long as you store it somewhere moderatley cool and out of sunlight. The longer it sits the more flavor infuses. If you are low sodium dont add any salt, if not then go ahead and add a reasonable amount of salt in proportion to the amount of chili oil you are making (it brings out the more complex flavors, and brightens up the herbaceous notes).
For the noodles, stir fry some minced or ground pork with salt and pepper, and then throw it into the bowl with the chili oil. Then fry up the noodles, throw them in the bowl and mix it all around.
Congrats, you just made a traditional dan dan mien, one of my all time favorite dishes (it doesnt beat braised pork belly though).
I ADORE fennel and cloves, and almost ALL spices generally, and especially in Asian and Southeast Asian cuisine. It really compliments my constitution. We like to suck on cloves. It's good for you, and delicious at the same time. Better than gum.
But, oy vey, do I still struggle with STAR ANISE. It's the reason that, though I love the underlying preparations of SO many FIVE SPICE recipes, I just struggle with the Five Spice itself. I WANT to like it desperately. But the star anise just gets me. I've managed to acclimate my palate to it to a degree over the years. I don't feel as sick, MOST of the time. Occasionally, I'll get really nauseous. BUT, now, I ALSO get the rare occasions when I am blessed to genuinely enjoy the dish and the spices too. I noticed that good quality pork and rice noodles seem to be at play when that special chemistry occurs that allows me to enjoy the Star Anise.
Any tips for learning how to love Star Anise/Five Spice would be greatly appreciated! Thanks for all your very helpful info. It was a pleasure read! ❤❤
