  • I had my first live session on CZcams and i thought what better thing to make than the famous East African Mahamri. If you have never sunk your teeth onto these pillowy pillows of love, you my friend are missing out.Actually, if you have not tried East African cuisine you're missing out big time. I cannot praise it enough. Not because its what i grew up on but because it truly is spectacular.

      @@swahilifood Thanks so much for your recipe,i made the best mahamri,by just following your steps,i used baking powder,because couldn't find yeast in most of the stores near me! I did add yeast extract which i thought it's yeast and it came out perfect!😊

      I wanted to ask, how long do we knead the dough for? I tried making them today, but they were too firm inside after frying.
      Btw I kneaded my dough for about 6 mins, and used full fat milk in-substitute of coconut milk.

    *Mahamri*
    1 tsp Yeast
    3 cups Flour 360g
    8 tbls Sugar 120g
    1 fresh Cardamon pod smash
    Mix 2gthr
    1 cup Coconut milk (blend)
    2 tbls coconut milk (blend)
    Knead Knead knead until air bubbles have formed.
    Cut dough in 4-rtz
    Proof 4 x dough for 30min
    Shape into mahamris
    Fry
    Enjoy

      If you use milk, make sure you add 1 tbsp melted butter to it

      No need to add any oil when you use coconut milk 😊 there’s enough natural oils in there

      I put it in a container and it goes into the bin. Don’t pour it down the drain 💕

      I find that when it changes colour it also changes flavour and reusing it makes the new food taste weird. So at the point when the flavour changes (even before the colour changes) I discard it. I also prefer using a smaller amount of oil when deep frying so that I can finish it up fast and not have to throw away any.
