made a similar soup with the classic 4 Italian fresh herbs, Asafoetida, white pepper, flaky crystal salt, garlic, ginger, and Chinese 5 spice blend. definitely added too much fennel since it was my first time having watercress that wasn't raw but it was a delicious meal that took less than 30 minutes

Nice! I like the bit about how the seasons tell us what we need. It’s part of our culinary and biological evolution to eat foods at certain times for good health maintenance.

Hi, this is your cress-loving subscriber in France. This is a good explanation and demo! One of the reasons so many French recipes such as what Hélène does is that they tend to be frugal and thrifty people, but also, food, which is valued most when in-season, local and organic, is kinda sacred and they really don't seem to go for heavy spices, a lot of mixing of flavors which cloud the appreciation of the taste of the ingredients, or sauces (except in regional, seasonal exceptions and Lyon is famous for rich sauces). I wouldn't change your recipe one bit -- it looks really sound. Uprated!

This looks delicious. Pairing toasted sesame oil with greens sounds really flavorful, plus the color of the soup has me longing for the grass to turn green again. Sigh.

The problem I found is that "Organic Watercress" is $3.99 per 4 oz. bag at Whole Foods. NOBODY HAD FRESH OR EVEN CONVENTIONAL That's $8 a cup, or $40 for 5 cups. I bought 2 bags and improvised by adding some to my salads for lunch during the week. And NO I will not eat Conventional watercress that is sprayed with chemicals, and I don't know of a local farmer near Chicago who grows Watercress.

I had no idea what to serve for dinner tonight. I'm tired! Fresh tomato and mozzarella, fresh mellon, cheeses, fine, great, but what to do with all that watercress? Potato! Onion! Garlic! SOLVED! xo

I just had watercress for the first time and it's incredibly SPICY, it hurt and was like mustard gas in my sinus lol! Omg it was like eating wasabi, sigh Publix ran out of buy 1 get 1 arugula so I was left with watercress.
