I’ve always wondered why if Cubans, Dominicans, and Puerto Ricans are Caribbean, is it that they only choose to venture out with other Spanish speaking country cuisines or European cuisine, yet stay away from not only eating but cooking other African or Afro-Caribbean foods with the exception of very few???
I’m not sure what your cultural background is but I have to disagree with you here. I can’t speak for other countries but I know Puerto Rican food is deeply influenced by our African & Taino roots. Of course we are going to have some European influence because that is the nature of our history. Today we can even see some American influence in some more modern dishes. But our traditional dishes are all rich with the culture of our African & Taino ancestors.
