Chinese Steamed Egg with Minced Meat 鸡蛋蒸肉饼
Ingredients:
Serves 4 pax

Marinated minced meat

150g (5.29oz) minced meat (you can use minced pork or chicken but we used minced pork in the video)
0.5 teaspoon salt
2 tablespoons water
1 tablespoon cornflour
Egg mixture
-----
4 eggs (about 200ml or 6.76 fl oz eggs)
300ml (10.14 fl oz) water (use 1:1.5 egg to water ratio)
0.5 teaspoon salt
0.5 teaspoon chicken stock powder
1 teaspoon Chinese cooking wine - Shaoxing Huatiao wine
Soy sauce mix

4 tablespoons hot water
0.5 teaspoon sugar
2 tablespoons light soy sauce
Garnish with some chopped spring onions before serving.

I made this today with your recipe, Roland. It is very delicious.. 🤤 The egg to water ratio yielded a soft and silky egg custard. The seasonings for eggs and pork mince is good enough. I didn’t make the sauce to top the finished dish. Thanks for sharing the recipe and method 🙏🏻😊

Running out of time and didn’t know what to cook. Saw this recipe and whipped it up as fast as I could. I couldn’t be happier. Texture is soft like chawanmushi. I only added some sesame oil to the meat. I thought 300ml water was a little much but everything turned out perfect. I used a shallow plate so 3 tbsp of the sauce was enough. Thank you Roland once again.

Will the meat get fully cooked in the 10 mins of steaming time?
Hi Audrey. Yes you can follow Roland’s instructions in the video. We’ve made it, tried and digested the food with no problem. What you see was exactly what was done. Happy cooking!
Yeah, this dish is a keeper. Instead of minced pork, I used chopped steak ham, bacon and Chinese sausage.
Can i use a metal plate to cover instead of using foil paper?
Yes, but the thickness of the plate may affect cooking time. You will have to adjust it.

I tried yesterday. The steaming time of 10 plus another 10 minutes holding time at 1000Wis not enough. I needed to steam again for another 5 mins. So maybe need to modify the steaming duration.

I believe there’s a difference between yours and mine is the fire setting but all is good. Glad to know it turned out okay for you with the additional 5 mins steaming time

Using pork ribs to cook pig's trotter?
Hihi, yes you can no problem. Just that you may not get the lip-smacking effect cos there's not enough facts but it'll still work. If you're concerned about the fattiness of pig trotter, may i suggest you to get muscle meat instead? Happy cooking.
