for bars, i'm thinking about changing my pursuit out and adding tab performance Folsom Prison Series Handlebars for Indian - they have several heights available.
only 2 things I don't like are speakers in the saddle bags (take up to much valuable space) and that piece on the front fender. I took the speakers out of my Street Glide and just fiberglassed over the inside of the speaker grills so it still looks like I have speakers. Awesome looking bike.
You a actually don’t loose that much space with the speakers. I went a on a 6day bike trip and was able to fit a duffle bag in there with all my clothes
Nice bike. I have the same bike (23 Challenger Elit). Love it! The stalling and the lag is not normal. Look up throttle body synchronization. It might need to be done on yours. I'm on my second Challenger with about 35k miles total. There are a few things to know about this bike, but all things considered, they've been solid, dependable bikes. I couldn't imagine a funner bike to ride. Ride safe!

I thought about those. I just didn’t like the way they looked from the side

I did the relearn one time and it was better.
