- Hand-pulled noodles, or lamian, are a specialty of Lanzhou in northwestern China. People here start the day with spicy bowls of beef noodle soup-and they’re all made to order. We went to a noodle school where people learn how to pull noodles by hand to see how it’s done properly.

The synthetic ash is to make the dough easier to pull. It's a dough reducer. Elasticity is the oppose of that... The ash is the key ingredient to hand pulled noodles, though you can substitute it with other dough reducers for similar effect.

Funny how Japanese Lamian (Ra-men) shops call themselves "pulling noodles" but you rarely see any of them pull their own noodles.
Although the root word may have originated from Lamian becoming Ramen, the “Ra” character doesn’t represent or abbreviated “pull” in Japanese.
Same goes with Ra-yu (chilli oil)
@@Amplifymagic the ra in rayu means spicy in Chinese and yu means oil. So just spicy oil. “Pull” and “spicy” are pronounced the same in Chinese although written differently.
@@Amplifymagic 拉 and 辣 are two completely different characters, though the pronunciations are similar. This is a good example why so many westners make mistakes in learning east Asian culture.
@@AmplifymagicRamen is written is katakana which means it is a foreign word for Japanese, it started with Chinese people opening noodle shops in Japan. Though its is not very clear which kind of noodle started there, ramen the name took root in Japan and Japanese started to make their own interpretation of it, and we get the ramen in Japan today.
@@zihaoding4864 men (麺) is universal, same kanji as Japanese.
It’s the ra- part that is in question.

Wow impressive!! We love noodles, any kind of noodles! Rice noodles, egg noodles, thin noodles, thick noodles... Lanzhou noodles is one of my favorite when I living in China! This made me crave it again!! A good bowl of Lanzhou noodle is simple but all about the good noodles! It inspired me so much of my authentic food culture! I would have to learn how to make and present it in my cooking channel!😉

in the US it could be like $9. In China it's much cheaper of course maybe like a couple dollars equivalent
The dingniu noodle restaurant mentioned in this program costs about 13 yuan per bowl which is slightly over 2 USD
in the western world we think italy is the noodle country, but they cannot compare to china. awesome how many different kinds of noodles china has and much they differ from each other not just the size and shape but how they are made and with different ingredients. incredible
