Except that when fighting Asgore, like when fighting Toriel, he's holding back his power. Though, while Toriel will refrain from dealing the final blow once you are dropped to 1 HP (unless you go out of your way to have her finish you off), Asgore will deal the final blow on you, but he'll always drop you to 1 HP before he can deal the final blow on you

I’ve done it before by modifying my save location and it basically starts off as the normal neutral cutscene at the barrier but then once the battle menu loads the mercy button is already gone and everything proceeds as in the genocide route ending

However, Asgore refuses, trying to put his own people ahead of selfish interests...but Frisk keeps getting fatter and fatter on pie until they are completely immune to Asgore's attacks. When Asgore finally gives up, Frisk tells them he's out of pie. This breaks Asgore's mental state and he just goes crazy looking for pie.

It work that way because pie(bought) is already codet to lower (not set to lower) ATK and DEF it is because if you pacyfist (befriend everyone who you can) using Talk can lower his ATK and DEF us well to don't make combination (if it will set his stats it won't work because if you do 1 action (eat pie or talk) secont opcion will set stats to same number) but in Undertail no mater how Much DEF you got bullet won't deal 0 DMG (it rule is sometimes overwriten for exsaple flowey finał cut screen he can't kill you there or asriel final attack he won't deal dmg he will set your HP to lower number)
